Four Seasons Hotel Megève and Edmond de Rothschild Heritage Launch New Culinary Offerings for the Winter Season
Four Seasons Hotel Megève and Edmond de Rothschild Heritage are introducing several new dining experiences this winter, with an exciting gastronomic offering that takes in both local and international flavours. In addition to a new brasserie, guests can enjoy a festive afternoon tea at the Glass Bar, while Ideal 1850 Restaurant will be transformed into a cosy winter retreat adorned with elegant furnishings by renowned Italian fashion house Giorgio Armani.
Warm and Comforting Flavours at the Newly Launched Brasserie Benjamin
Four Seasons Hotel Megève kicks off the winter season with the launch of Brasserie Benjamin, a warm and stylish space serving traditional French classics prepared with fine local ingredients to reflect the spirit of the surrounding mountains.
Earthy wooden tones prevail, lending a chic, alpine feel, while light floods in through large French windows to offer breathtaking views of the snowy Alps. Contemporary works of art enhance the décor, creating an elegant and inviting space where details have been thoughtfully designed to elevate the dining experience, blending fine dining with an appreciation for art and lifestyle.
At the helm of the brasserie is Italian Chef Armando Acquaviva, who brings years of experience from his time at legendary Parisian restaurant Lasserre, where he mastered the art of French cuisine. Over the last few years, he has also worked closely with Anne-Sophie Pic, the world’s most decorated Michelin-starred female chef. Chef Acquaviva’s creations blend tradition and creativity. The menu features comforting flavours such as sole meunière, a classic dish of floured and fried sole traditionally served with a lemon and parsley sauce; pâté en croute, a hearty meat pie wrapped in crust pastry that is the perfect antidote for a cold winter’s day; and Chartreuse veal chops served in a rich mushroom demi-glace accompanied by a delicate leek tartlet, an exquisite gourmet dish with rich mountain flavours, to name a few.
Working alongside Chef Acquaviva is Pastry Chef Jonathan Chapuy, whose sweet creations make the most of alpine produce, incorporating mountain herbs and wildflowers. His profiteroles with chocolate and iced meadowsweet are a firm favourite, as is his much-loved Rothschild chocolate soufflé, a decadently rich and fluffy creation that is pure indulgence.
Enhancing the dining experience is a selection of outstanding wines from the 14,000-bottle-strong wine cellar, which houses a large selection of premium wines including an 1869 Château Lafite Rothschild, 1er Grand Cru Classé. With its striking circular design, the wine cellar can be privatised for intimate dinners of up to eight guests, featuring a personalised Brasserie Benjamin tasting menu.
The Brasserie will be open daily for dinner throughout the winter season.
Innovative Cocktails and All-Day Dining at Edmond’s
This winter, the Hotel’s iconic Bar Edmond becomes Edmond’s, offering all-day dining and creative cocktails in a cosy, bistro-style setting. With large windows affording delightful alpine views, Edmond’s envelops guests in a warm and cosy atmosphere, making this the perfect spot to unwind over a drink or informal meal with friends and loved ones. Over the winter season, it will be open daily from 11:30 am to 11:30 pm for beverages, with food served between 12:00 noon and 9:30 pm.
Indulgent Afternoon Tea Experience at the Glass Bar
Throughout the winter season, guests can indulge in an Alpine Stroll afternoon tea crafted by chef Jonathan Chapuy at the Glass Bar. This striking venue features a meticulously handcrafted bar of sandblasted raw glass, providing a stunning backdrop for the experience. Between December 20, 2024 and January 5, 2025, the three-course afternoon tea experience takes on a festive flair, with seasonal fruits in the spotlight.
The indulgence begins with a zesty pomelo pre-dessert paired with the fresh, fruity notes of Barons de Rothschild’s rosé champagne. Next is a delicate Tahitian vanilla Saint-Honoré enhanced with black truffle shavings, served alongside a hot beverage of choice. The experience concludes with a selection of exquisite seasonal bites such as marron glacé, saffron mandarin cake, and a pine nut and caramel cookie. The chef has put a creative twist on a Green Chaud, a classic après-ski cocktail of hot chocolate and green chartreuse that he elevates with a splash of Sapinette, a fir tree liqueur that adds a strong alpine touch.
With its cosy sofas and crackling fireplace, the Glass Bar is the perfect spot to enjoy a pre- or post-dinner drink in a stylish yet laidback setting, with live music adding to the après-ski ambience during the festive season and February mid-term break. The Bar is open daily from 4:00 to 10:00 pm (extended to 11:00 pm during the festive season).
Sophisticated Armani Furnishings at Idéal 1850
With a stunning setting perched at 1850 metres (6,070 feet) on the slopes, Idéal 1850 is one of Megève’s oldest altitude restaurants, offering stunning views of Mont Blanc from its expansive terrace. The restaurant recently featured in Season 4 of Netflix’s hit series Emily in Paris, which saw Emily’s alpine adventures unfold in the picturesque setting of Megève.
This winter, the restaurant has renewed its partnership with renowned Italian fashion brand Giorgio Armani, whose winter brand Neve will dress the space with stylish tableware, cushions and accessories exuding a warm alpine feel with a touch of Italian dolce vita.
Chef Filippo Rassetti has thought up a new menu, with dishes that make the most of alpine produce, with ingredients sourced from local small to medium-sized farms. As well as longstanding favourites such as the restaurant’s iconic Mac Rothschild burger or the traditional boîte chaude - a warm, melted local cheese served with potatoes, cured meats, and salad. Background tunes will create a sophisticated, upbeat vibe, with the Italian brand curating a special playlist for the occasion while also hosting DJ sets on selected dates.
The restaurant will be open daily from 11:30 am to 3:30 pm, with the option for private event buy-outs for both lunch and dinner, with evening buy-outs subject to weather conditions.
