Four Seasons Hotel Megève Unveils a New Take on the Iconic “The Rochebrune Gondola” Yule Log
Pastry chef Jonathan Chapuy revisits the iconic “The Rochebrune Gondola” at Four Seasons Hotel Megève, celebrating the magic of Christmas and the alpine charm of Megève. Every detail has been carefully crafted to recreate the legendary Rochebrune gondola while introducing new flavours that evoke a winter wonderland. The Yule log is gluten-free, making this delightful creation accessible to all.
On the palate, the log reveals a delicate interplay of textures and flavours. Caramelized almond crunch adds sweetness and crispness, perfectly complemented by a vanilla-infused pear compote with fresh, fruity notes. At its heart, a meadowsweet caramel brings floral hints, while the dark chocolate (68 percent) sponge and mousse provide richness and lightness. The entire creation is encased in a melting white chocolate shell, subtly flavoured with plum kernel oil, enhancing almond notes and highlighting the natural aromas of meadowsweet for a perfectly balanced taste.
The grand finale comes with the base supporting the gondola—a decadent dark chocolate bar layered with an intense almond and meadowsweet praline. This comforting treat pairs beautifully with a hot drink, to be enjoyed at the end of a meal as a petit dessert, or savoured later to extend the holiday indulgence.
