A bold new chapter begins at Marcus with the arrival of Jay Lawson, a visionary mixologist. His presence unveils a refined and elevated cocktail culture across the restaurant, lounge, and night bar at Four Seasons Hotel Montreal.

Jay isn’t your average bartender. He’s a chemist-turned-cocktail visionary, known for blending precision with playfulness and adding a touch of theatre to every glass. After making waves at iconic Montreal spots like Cloakroom and Le Fantôme, and helping shape the internationally acclaimed Stillife, he now brings his signature creativity to Marcus.

As Bar Production Manager and Head Mixologist, Jay Lawson brings over 13 years of experience to the bar. He honed his craft at some of North America’s most celebrated cocktail destinations, including Stillife, Pastel, Le Fantôme. Thanks to his leadership, the venue he managed earned a spot on the continent’s Top 50 Bars list for three consecutive years. Known for his personality, technical flair, and artistic approach, Jay is passionate about fermented drinks and obsessed with detail, he brings a sense of theatre and storytelling to every creation. Now at Marcus, he leads a new era of cocktail culture - one rooted in innovation, bold ideas, and deep industry insight.

"I want each cocktail to be a moment - surprising, refined, and a little bit magical," says Lawson.

A Seasonal Menu That Changes with the City

Jay’s first order of business? Rolling out a brand-new cocktail menu for the Marcus Night Bar, starting with a Spring Edition that captures the essence of renewal and fresh energy. This evolving menu will be reimagined each season - offering something new, unexpected, and delicious all year long.

In addition to this new collection, Jay also crafts bespoke cocktails tailored to special events. Including The Art of Night, a monthly experience that pairs one featured artist with one exclusive cocktail creation. Each drink is inspired by the artist’s work and brought to life by Jay’s imagination and signature style.
