From Plate to Glass: A New Seasonal Experience Debuts at The Merchant Room at Naples Beach Club, A Four Seasons Resort
A new season arrives at The Merchant Room at Naples Beach Club, A Four Seasons Resort, introducing a trio of offerings that celebrate the season from glass to plate to table. Inspired by peak seasonal produce and bright, expressive flavours, the latest dishes and cocktails highlight freshness and nuance, allowing each ingredient to shine. From updated dinner menus and elevated bar fare to the debut of a refreshed Martini program, The Merchant Room invites guests to savour sultry coastal evenings in style.
Spring peas, citrus, and delicate herbal notes set the tone for the new dinner menu, featuring fresh pastas such as housemade Spring Pea Cappellacci, filled with mascarpone, fines herbes, and morel mushrooms. New seafood offerings include Citrus-Cured Salmon Tiradito as a starter and Steelhead Trout served with artichoke barigoule, fava beans, pomme purée, and sorrel sabayon as a main course. New desserts reflect the season’s bright, flavour-forward approach, including Vacherin with crispy meringue, lime coconut sorbet, fromage blanc cream, and olive oil shortbread, and Fraise, featuring strawberry-rhubarb compote, clove cream, vanilla gelato, and almond cake.
"We are thrilled to debut a new menu as we head into the warmer months in Naples. Having been able to spend time with farmers, my team and I have been sourcing what is at its peak right now,” says Chef Gavin Kaysen. “We look forward to welcoming guests in to enjoy this new menu at The Merchant Room.”
The elevated Bar Fare menu delivers a refined yet approachable selection of small plates. Standouts include Fried Chicken Bites with caviar, Devilled Eggs with crème fraîche and everything bagel spice, and Tuna Carpaccio with soy-cured yolk, toasted peanuts, black garlic vinaigrette, ginger, and Thai basil. The beloved Merchant Burger remains a perennial favourite, anchoring the menu year-round.
Complementing the culinary updates, a new Martini program raises the bar with classic and contemporary expressions designed to pair seamlessly with the menu. Offerings include a Classic Martini, Dirty Martini, and Vesper Martini, alongside a more aromatic 50/50 Martini. The ever-popular Espresso Martini rounds out the selection, while the non-alcoholic Breakfast Martini delivers vibrant flavour without the spirit, crafted with 0.0% ABV Aplós Ease, jasmine, citrus, and yuzu marmalade.
The Merchant Room serves dinner daily from 5:00 to 9:00 pm, with reservations highly recommended and available online. The Bar menu is offered daily from 12:00 noon to 5:00 pm.
