Mimo Restaurant and Bar Announces Chef Collaboration with Chef Byron Gomez of Michelin-Starred Restaurant Bruto in Denver

Led by the culinary team at Four Seasons Hotel Nashville, the dinner will feature four courses and passed appetizers with each course inspired by the chefs’ backgrounds

Four Seasons Hotel Nashville’s Executive Chef Derek Simcik and the culinary team at Mimo Restaurant and Bar are partnering with Chef Byron Gomez of Denver’s Michelin-starred Bruto and Top Chef contestant for a one-night-only “Family Meal” Chef Dinner on May 14.

In addition to Chef Derek and Chef Byron, this exclusive experience features Mimo Chef Nicky Miscia and Pastry Chef Hector Llompart for an unforgettable evening celebrating community and creativity.

The evening begins with a private welcome reception at Mimo Bar from 6:00-7:00 p.m., featuring live music from a vinyl DJ and cocktails crafted by Beverage Manager Alexandre Renoue. The culinary adventure begins during the reception with a sampling of three appetizers, each crafted by one of the participating chefs.

Guests can enjoy a morcilla with blue corn cake and pejibaye purée, created by Chef Byron; a foie bombolini with pecorino fonduta and porcini powder from Chef Nicky; and an oyster and pork croquette served with comeback sauce created by Chef Derek.

Following the welcome reception, guests will be invited to the Mimo dining room for the four-course, sharable meal. Each chef created a course inspired by their cultural heritage, offering a unique and personal expression of flavour.

Inspired by Chef Nicky's Tuscan upbringing, the first course will be a red mullet with saffron broth, charred rapini, shallot marmalade, and garlic. Chef Derek’s global adventures are reflected in a second course of seafood gumbo with blue crab, charred okra, and gumbo crab broth. Born in Costa Rica and raised in New York, Chef Byron brings a tropical spin to the main course with a ribeye complemented with a lizano sauce, cas chimichurri, sweet plantain au gratin, and gallo pinto. The dinner will conclude with a coconut, chocolate, and passionfruit dessert inspired by Chef Hector’s Puerto Rican upbringing.

“We’re thrilled to partner with Chef Byron to bring this one-night-only chef collab experience to Mimo,” said Chef Derek Simcik. “This dinner is a true celebration of culture, creativity, and collaboration, with each course inspired by the unique background and story of the chef behind it. Food should always tell a story, and this menu allows us to tell the stories of where we came from and what inspires us.”

Tickets for the Chef Dinner Family Meal are USD 120 per person, and includes welcome cocktails. Additional craft cocktails and specialty drinks, curated by Alexandre, will be available for purchase. Reservations can be made through OpenTable or by calling the restaurant at +1 615 610 6990.

Guests will be able to enjoy up to three hours of complimentary valet through the Hotel.

Chef Derek Simcik serves as Executive Chef for the entire property, including overseeing the Hotel’s flagship restaurant, Mimo Restaurant and Bar; its rooftop restaurant Rivière; special events and banquets; and in-room dining.
