Chef Nicky Miscia’s deep appreciation for food can be traced back to his upbringing in Florence, Italy, where gathering around the table with loved ones to share a delicious meal was an important family tradition. It was during his time in Los Angeles, California, on a student visa, that he discovered an interest in and passion for cooking. After working as a line cook at the Michelin-starred Valentino and taking some culinary classes at a community college, his instructor became a mentor and inspired Nicky to apply for the Culinary Institute of America in Hyde Park, New York.

Upon graduation, Chef Nicky spent more than a decade working alongside Michelin-starred chefs in award-winning restaurants across America and Europe, including Torre del Saracino (two Michelin stars) in Naples, Italy; Jose Andrés’ Minibar (two Michelin stars) in Washington, DC; and the James Beard Award-winning restaurant Vidalia in Washington, DC.

In the fall of 2022, he joined the pre-opening team at Four Seasons Hotel Nashville to open the Hotel’s flagship restaurant, Mimo Restaurant and Bar. Drawing from his Italian heritage and his vast culinary experience, Chef Nicky brings unmatched enthusiasm, precision, and heart to the kitchen, the staff, and every guest.
