With 25 years of experience across luxury restaurants, hotels, and exclusive clubs, Chef Jason Winton leads the culinary team at Seasons Restaurant, the heart of Four Seasons Residence Club Aviara, delivering a refined dining experience shaped by his diverse career. Known for his creativity and commitment to sustainability, Chef Winton brings a modern American culinary approach that highlights locally sourced ingredients and seasonal flavours.

Starting his career at The Westin Edmonton, Chef Winton earned his Red Seal chef's certificate in 1999 at the Northern Alberta Institute of Technology (NAIT) in Edmonton. His journey then led him to Vancouver, where he honed his craft at some of the city’s most prestigious restaurants, including the renowned Blue Water Cafe. Under the expert guidance of Chef Frank Pabst, Chef Winton elevated his culinary techniques, deepening his appreciation for the exceptional local ingredients and distinctive flavours of the Pacific Northwest.

Chef Winton’s culinary expertise expanded internationally with two years spent in the British Virgin Islands at Coco Maya, one of Virgin Gorda’s premier restaurants, before returning to Canada to work at the Fairmont Banff Springs. At this renowned resort, he worked across multiple dining concepts, including the Banquet Kitchen, before transferring to the Fairmont Grand Del Mar in San Diego. There, he led the Clubhouse Kitchen and Private Members Lounge for four years, followed by the Banquet Kitchen.

Chef Winton’s cooking style is deeply influenced by the Pacific Northwest, with a focus on sustainability and the flavours of the ocean. He prides himself on creating dishes that are simple yet flavourful, often incorporating Mediterranean influences that highlight fresh, seasonal ingredients.
