An exclusive five-course Italian dining experience paired with a bespoke ballet performance debuts this fall

Four Seasons Resort Oahu at Ko Olina, a tranquil enclave on Oahu’s western coastline, and Ballet Hawaii – the leading ballet company in Hawaii, invite guests to experience an extraordinary evening where fine dining and performing arts converge. On Saturday, October 3 the Resort's signature Italian restaurant, Noe, will host an immersive Evening of Flavor and Dance, featuring a curated five-course menu paired with ballet performances throughout each course inspired by the elegance and artistry of dance.

The special event transforms dinner into a sensory journey, with each course accompanied by a unique performance by Ballet Hawaii dancers. Inspired by the beloved holiday collaborations between Four Seasons Resort Oahu and Ballet Hawaii over the years, where dancers delight guests through progressive performances across the Resort, this intimate experience reimagines that tradition in a refined culinary setting.

First Course
Hokkaido Uni Toast with Milk Bread, Umami Brown Butter, Cremosa Ricotta, Finger Limes, and Chive Oil

Second Course
Ahi Carpaccio with Smoked Ahi Tuna, Charred Hearts of Palm, Sea Asparagus Salsa Verde, Taggiasca Olives, Caper Berries, and Ho Farms Radishes
Paired with: Domaine Fontsainte "Gris de Gris" Corbières, Languedoc

Third Course
Maldera Buffalo Mozzarella with Mezzaluna Ravioli with Artichokes, Lion's Mane Mushroom, 36-Month White Cow Modenese, and Black Winter Truffle

Fourth Course
Porcini-Crusted Snake River Farms Filet Mignon with Delicata Squash, Kupu Farms Micro Cress, Kabocha Squash Purée, Porcini, Foie Gras Emulsion, and Marsala Veal Jus

Throughout the evening, Ballet Hawaii dancers will present four original performances choreographed to reflect the mood and character of each course, creating a seamless dialogue between culinary craftsmanship and artistic expression.
