Virtù Unveils Locally Crafted Tonic Water and Vermouth Collection at Four Seasons Hotel Tokyo at Otemachi

Virtù at Four Seasons Hotel Tokyo at Otemachi has introduced a new chapter in its beverage program with the launch of a locally crafted collection of vermouths and a signature tonic water. Developed with Hiyori, a boutique winery based in Yamanashi, the new offerings reflect a deep respect for Japanese ingredients, terroir and craftsmanship.

The collection includes three styles of vermouth – SÈCHE (dry), SHIRO (white), and AKA (sweet) – as well as KARUI, a tonic water blended with Japanese citrus and Koshu grape extract. These ingredients have been carefully selected and crafted to complement Virtù’s Paris-meets-Tokyo cocktail style, with a focus on balance, freshness, and a distinct sense of place.

“This new collection speaks to our ongoing commitment to showcase Japanese craft at its finest,” says Uday Rao, Regional Vice President and General Manager of Four Seasons Hotel Tokyo at Otemachi. “We are proud to offer guests something that can only be experienced here, something rooted in where we are and how we serve.”

KARUI, the original tonic water, brings together three types of Japanese citrus – yuzu, shikuwasa, and jabara – with Koshu grape skin extract from Katsunuma. It’s already featured in some of Virtù’s standout cocktails, including Someiyoshino, Hoji Epice, and Harukaze, and is also available for purchase at THE LOUNGE.

Guided by Virtù’s creative interpretation of vermouths, the collection tells three different stories:

  • SÈCHE, the dry style, is shaped by Virtù’s restrained hand, drawing out the gentle bitterness of Yamanashi yuzu and Amur cork tree bark.
  • SHIRO, the white vermouth, reflects a softer expression, where Virtù balances structure with a honeyed finish from locally sourced Amur cork tree honey.
  • AKA, the red variant, is Virtù’s most expressive blend, harmonising the floral brightness of cherry blossom leaves with the earthy depth of Japanese mugwort.

“Vermouth and tonic are the quiet heroes behind some of our favourite cocktails,” says Keith Motsi, Head Bartender at Virtù. “We didn’t want to settle for what was available. We wanted something that speaks to our style, something that feels right here in Tokyo — light, expressive, and rooted in the land.”

Cocktails featuring the new vermouths will debut later this season, offering Japanese interpretations of six best-selling classics. All products in this collaboration are exclusive to Virtù.
