To celebrate the festive season, Pastry Chef Michaël Bartocetti of Four Seasons Hotel George V, Paris has unveiled a sophisticated and indulgent Yule Log that is a veritable masterpiece of confectionary art. Celebrating flavour and creativity, this breathtaking holiday centrepiece echoes the shape of a holly leaf, an iconic symbol of the festive season. Its smooth and flowing curves, adorned with small chocolate pearls, are a signature feature of the chef’s desserts.
Infused with delicate pear and chocolate notes, the Yule Log delivers a beautifully balanced flavour profile. At its heart is a velvety chocolate mousse, offering a rich, caramelised finish that envelops every layer in indulgence. Milk and dark chocolate combine to create a beautifully balanced yet complex flavour experience, elevated by a delicate infusion of bergamot that introduces a subtle hint of citrus.
The top layer is elegantly adorned with crispy puffed rice, tapioca milk and luscious Williams pear that brings a tantalising crunch, while a sprinkle of sea salt imparts savoury depth. The mousse is complemented by a delicate biscuit that adds softness, perfectly contrasted by the crisp pearls of puffed rice and tapioca, which bring a playful touch of lightness and texture to the creation.
