The Lab of Fine Drinking: Seasonal, Course-Format Cocktail Bar Opens at Four Seasons Hotel Seoul

Tucked away on Basement Level 1, inside the glamorous Charles H., H. Bar—The Lab of Fine Drinking—is Korea’s course-format cocktail bar within a hotel. The exclusive new offering at Four Seasons Hotel Seoul is open to the public every Tuesday to Saturday from July 31, 2025.
Inspired by the legendary cocktail writer Charles H. Baker Jr. (1895-1987), H. Bar reimagines how the celebrated author and bon vivant might host a gathering in Seoul today. True to his spirit of innovation, H. Bar's laboratory-concept cocktails are crafted using hyper-seasonal local ingredients and cutting-edge techniques such as rotary evaporation, centrifugation, liquid nitrogen and freeze-drying.
Inside The Lab of Fine Drinking
H. Bar is hidden behind a unique time-capsule entrance, creating a complete 360-degree shift in perspective. Once inside, its artisanal cocktails weave multi-sensory narratives between bartender and guest, aided by the eight front-row seats of its unique H-shape.
Seatings and Servings
H. Bar is Korea's first hotel bar to offer "course-style" cocktails: eight drinks accompanied by three pairing bites - an experience as immersive and intimate as it is innovative and experimental.
Two Course Menu seatings are available from 8:30 to 10:00 pm and 10:30 pm to 12:00 midnight Thursday to Saturday. An à la carte menu is available from 6:00 pm to 1:30 am on Tuesday and Wednesday, and outside of course seating hours on Thursday to Saturday.
Each Course Menu is priced at KRW 150,000 per person. À la carte cocktails are priced from KRW 38,000 plus a KRW 10,000 Cover Charge (waived for course menu guests).
The Art of Surprise
H. Bar's signature elements draw from the essence of surprise. The deception of Shampagne - Champagne reinterpreted with Korean ingredients only; the blind sensory exploration of Sweet Corn (zero-waste in an opaque glass) and the solid-form uniqueness of frozen Sgroppino.
Seasonal Savviness
The super experimental vibe is heightened by local hyper-seasonal ingredients. Chodang corn, Daejeo tomato, Korean melon, mango, and perilla leaf feature in menus that shift with the seasons; transformed and layered to deliver unexpected, complex delights each time.
What To Expect
Awe, intrigue flavour and style. The fizzy, fruity fun of Alcopop's Black Mango Watermelon, Seongju Chamoe and Watermelon Ice pop. The nature-inspired originality of Matcha Latte, complete with flash-frozen local herbs and a hand-cut ice diamond. The taste-shifting wonder of Journey: a complex savoury journey that maps the humble tomato on a global culinary journey. The double delight of Dual Daquiri, served with a pearl that transforms the cocktail's flavour profile with the first sip. The botanical Korean calm of Nightcap, the first seasonal installment of H. Bar's rotating amaro. Add the divinely delicious deception and sensory surprises of Shampagne, Sweet Corn and Sgroppino, and the scene is set for a bold and imaginative flight into new cocktail territory.
H. Bar’s chic, minimalist design further defines the experience. A quartz bar top, chromized steel, and lacquer green set a striking tone. Custom-designed tableware created in collaboration with Korean artisans enhances the uniqueness of each presentation. And the H-shaped modular bar provides the launchpad to transport eight adventurers into new realms of mixology magic.
