“101 Days of Summer” Afternoon Tea Launches at Four Seasons Hotel Seoul

May 30, 2025,
Seoul, Korea

As warm, golden days stretch into long carefree evenings, Four Seasons Hotel Seoul encapsulates the essence of the season with its new 101 Days of Summer Afternoon Tea. A joyful marriage of local, seasonal ingredients and nature-inspired creativity, it's available daily in the Hotel's lobby lounge, Maru, from June 1 to September 9, 2025. Accompanying the new Afternoon Tea is the 101 Days of Summer Drinks Menu: a trendy, four-drink tribute to the city's summer-long love affair with Korean peaches.

A Sensorial Afternoon Tea

Maru's 101 Days of Summer Afternoon Tea is inspired by a sunlit stroll through the nearby Gyeongbokgung Palace grounds. Served in front of windows onto Seoul's sun-kissed summer street scene, it transports guests to the countryside via fragrant native herbs and flowers. The brilliance of Executive Pastry Chef Steven Jin’s creativity further shines through unexpected flavour pairings: banana and Sancho pepper; local hibiscus with Dulcey chocolate. The result is a refined nod to Korean culture as well as Jin's Asian heritage and French upbringing.

Savoury delights are light and expressive. A King Crab Tartlet with compressed Korean cucumber and lime gel evokes the fresh, salty breeze of summer. Cured ham is elevated with a lightly pickled quail egg and sauce Gribiche. Peking Duck Rillette is served with sweet Korean peaches and delicate Baeri caviar, offering a luxurious balance of savoury and fruity flavours. Smoked Salmon zings with citrus crème and salmon roe.

Sweet sensations are equally reminiscent of the season's verve and vibrance: Shine Muscat Textures with a vibrant green matcha Chantilly; Summer Cherry Tartlet with bright basil ganache and juicy cherry coolant; Apple Cinnamon Brioche with orchard-fresh fruit; Raspberry Ginseng Compote and luxurious vanilla Chantilly. Then there's the more adventurous Sancho Pepper Mousse with passion fruit confit or the playfully sophisticated Dulcey Chocolate Mousse: a hibiscus and grapefruit twist on the French classic.

Sip Into Summer

Diverse, local peach varieties – a quintessential South Korean summer fruit – sweeten four bold 101 Days of Summer beverage concoctions. Available to enjoy with the Afternoon Tea, or independently of it, each Instagram-worthy blend combines traditional ingredients with cutting-edge creativity.

The Boksunga Bellini dazzles with white peach, elderflower and prosecco. Peaches & Cream is a playful, dessert-like mocktail uniting yellow peach, vanilla and orange blossom with sweet, house-made meringue. Blood Peach Sujeonggwa tea reinvents the classic post-dinner Korean punch with blood peach, cinnamon and ginger. Cold Brew Ashotchoo coffee offers a creative spin on a modern Korean favourite with peach-iced tea and mango nectar. Bold, beautifully balanced and with a refreshing twist, it’s a Korean summer in a glass.

The 101 Days of Summer Afternoon Tea is priced at KRW 160,000 for two guests, including unlimited coffee or tea and one seasonal specialty beverage per person. An additional guest may be added for KRW 80,000.

Commenting on the new launch, Executive Pastry Chef Steven Jin at Four Seasons Hotel Seoul says, "At Maru, we love to celebrate each season with a creative Afternoon Teas experiences worth sharing.  101 Days of Summer is one of my favourites to date: a refreshing burst of light and bright loveliness that brings the countryside into the city and captures the joy of Korean summer."
