Four Seasons Hotel Singapore is pleased to welcome Belkacem Boubekeur as Executive Chef of Nobu Singapore, bringing more than two decades of international culinary experience across luxury hospitality and fine dining.

Born in Ténès, Algeria, and raised in southwest France, Chef Belkacem draws inspiration from the rich culinary traditions that have shaped his journey, alongside a deep appreciation for premium ingredients, thoughtful pairings and the discipline of the kitchen.

His culinary journey with Nobu has taken him from Nobu Monaco at Fairmont Monte Carlo to Nobu Dubai at Atlantis The Royal, where he most recently served as Chef de Cuisine, leading a team of 45 culinary professionals in one of the city’s leading luxury dining destinations.

Across his career, Chef Belkacem has worked alongside talented chefs and multicultural teams, building extensive experience in Japanese, French, Italian and international cuisine. At Fairmont Monte Carlo, he contributed to prestigious events, notably the wedding of Prince Albert II of Monaco.

At Nobu Singapore, Chef Belkacem will bring his leadership, experience and passion for developing people to the kitchen. “My aim is to unite a team with a shared passion, where they can grow, take pride in their craft and continually strive for excellence. I look forward to creating memorable dining experiences that exceed our guests' expectations."

Chef Belkacem’s cooking reflects both his French roots and his international culinary experience. Duck holds a special place in his repertoire, inspired by the traditional cuisine of southwest France, while foie gras was the first dish he prepared professionally and remains one of his favourites to create, often paired with premium ingredients for balance and depth. Asked which dish best represents him, he points to Tiradito, a Peruvian dish of thinly sliced raw fish, served with a vibrant, acidic sauce that is fresh, refined and balanced.

His approach to the kitchen is grounded in a spirit of continuous learning and respect for those around him. His advice to aspiring chefs is simple: Be patient, learn from those with experience and always strive to improve.

Beyond the kitchen, Chef Belkacem enjoys travelling, discovering new cultures and exploring different cuisines with his family. His day begins with good coffee and a clear plan, while his daughter remains one of his greatest sources of joy.

At Nobu Singapore, Chef Belkacem joins a dining destination known for its distinctive interpretation of contemporary Japanese-Peruvian cuisine. His appointment marks the next chapter of Nobu Singapore’s culinary journey, with a continued focus on thoughtfully curated dishes, genuine hospitality and memorable dining experiences.
