Step Into the Dream Lab: Four Seasons Hotel Sydney Lights up the Night for Vivid Sydney 2025
Epic Sensory cocktails at Grain Bar and a three-course Vivid Dreams menu at Mode Kitchen & Bar set to tantalise Vivid-goers
Grain Bar and Mode Kitchen & Bar at Four Seasons Hotel Sydney are inviting Sydneysiders to start their Vivid adventure where light meets imagination and indulgence, just steps from the action. From May 23 to June 14, 2025, these two iconic venues will be transformed into a kaleidoscope of colour, sound and flavour in honour of Sydney’s most luminous festival.
At Grain Bar, cocktail lovers are transported into The Dream Lab, a late-night sensory playground where glowing lab coat-clad mixologists serve up high-voltage cocktails with a touch of theatre. Shaking up new takes on Grain’s Epic Sensory Cocktail menu, the Pina Fizz and Palette Pop are dialled up with fairy floss clouds, oversized lollipops, coloured ice and glow-in-the-dark garnishes.
The Dream Lab officially opens nightly at 6:00 pm when the Vivid lights start, and DJ sets every Friday and Saturday from 8:00 pm till late will keep the energy alive, making this the city’s go-to venue for cocktails and connection during Vivid.
Meanwhile, at Mode Kitchen & Bar, diners are invited to indulge in a limited-edition Vivid menu from newly appointed Chef de Cuisine Marco Putzolu. Each evening throughout the festival, the restaurant will offer a Vivid Dream Lab Dinner, a three-course set menu (AUD 95 per person) designed to light up the palate with bold colours, unexpected textures, and flavours as vibrant as the city outside.
The three-course menu will include: a choice of Vannella burrata with green tomato salsa verde and Yarra Valley salmon roe or yellow fin tuna sashimi with blood orange gazpacho and dill; an Aquna Bay Murray Cod, local mushrooms and herbs pil pil sauce; or Margra lamb strapback with goats yoghurt and beetroot. And, to finish, in incredible Tutti Frutti Flower, made up of individual sponge cakes filled with mousse, each as colourful as the next.
Guests will also be welcome to enhance their dinner with a bespoke wine pairing (AUD 35 per person) curated by Hotel Sommelier Aman Vikhona, featuring premium selections from Charteris Wines.
