Four Seasons Resort and Residences Vail Announces First-Ever Winter Wine Series in Partnership with Pinea Winery, Daou Family Estates, Fisher Vineyards, and Silver Oak Cellars
In the company of distinguished sommeliers and vintners, a mix of curated wine dinners and special tastings in Flame Restaurant will spotlight vintages and the pioneering production techniques of vineyards out of California and Spain
Four Seasons Resort Vail announces the launch of its Winter Wine Series, the Resort’s first-ever seasonal partnership with a curated selection of the world’s leading winemakers in Flame Restaurant. The series commences in Flame Restaurant with a “Meet The Vintner” dinner hosted by Pinea Winery (December 23, 2023), followed by dinners with Daou Family Estates (January 19, 2024), Fisher Vineyards (March 1, 2024), and to conclude the series, Silver Oak Cellars (March 17, 2024).
“We are thrilled to bring these four wineries to Vail this winter and share our passion with our guests, residents, and local patrons. It is an exciting season as we are launching a new vibrant menu infused with international flavours at Flame that will complement these selections beautifully,” says Ellis Murphy, Assistant Director of Food & Beverage of Four Seasons Resort and Residences Vail. “This Winter Wine Series presents an exciting opportunity to showcase some extremely special vintages from leading winemakers in Spain and California, and likewise, to learn directly from guest sommeliers and vintners about each estate’s rich history, terroir, and viticulture.”
The announcement of the Winter Wine Series coincides with the launch of a completely reimagined menu at Flame Restaurant. Inspired by the culinary tastes of the Resort’s international clientele with a nod to the restaurant’s Rocky Mountain roots, this winter Flame introduces a dramatically reconceived culinary concept featuring a sophisticated mix of dishes infused with bold Latin flavours, and a superior assortment of Colorado fish, game, and steak. Signature menu items include the Sinaloa Spicy Aguachile, Crispy Apple and Watercress Salad, Portuguese Bacalao Potato Cakes, the “Après Pow for Two” Chipotle and Miso Baked Alaskan Cod and Taste of Colorado Rockies carving plate, and an exceptional selection of caviar.
“The culinary team at Flame Restaurant has long sought an opportunity to challenge our craft in this type of setting,” says Simon Purvis, Executive Chef at Flame Restaurant. “We are now putting the finishing touches on a series of special multi-course menus that I’m confident will artfully complement the unique personality of each vintage while paying homage to the local ingredients and gastronomic traditions of the regions in which each wine is produced.”
Tickets for wine dinners are available for USD 300 per person via Flame Restaurant on OpenTable.
About Pinea Winery
Hugo Del Pozzo founded the Pinea Winery with a simple but ambitious purpose: to produce some of the best wines in the world. To do so, along with childhood friend Vicente Pliego, they assembled 85 acres of mature vineyards situated near Olmedillo de Roa - the northern edge or Grand Cru part of the Ribera del Duero region in Spain. The vineyards benefit from extreme weather and limestone-rich soils and are farmed following organic and sustainable viticulture practices that provide grapes a unique sense of place. A world-class team of winemakers then pays attention to detail in every step of the wine-making process, resulting in wines characterized by lifted aromatics, complexity, and elegant texture.
About Daou Family Estates
Family owned and operated, DAOU is committed to producing collectible, world-class wines to rival the most respected appellations in the world. Situated on a 212-acre hilltop estate in the Adelaida District of Paso Robles, the remarkable geology, and high elevations were once described by renowned California winemaker André Tchelistcheff as “a jewel of ecological elements.” As stewards of this beautiful terroir, DAOU’s goal is to make unique fine wines that honestly and accurately reflect the potential of the Estate and to craft Bordeaux style wines that combine Old World tradition with New World techniques.
About Fisher Vineyards
Founded in 1973 by Fred and Juelle Fisher – and now led by three siblings of the second generation – Fisher Vineyards is the oldest winery dedicated since inception to estate grown wines from both Napa and Sonoma. Blessed by significant contributions over five decades from several of California’s great wine talents (including Paul Hobbs, Mia Klein, David Abreu, Aaron Pott and Adam Goodrich), Fisher Vineyards currently offers nine estate-grown, small-production bottlings each year.
About Silver Oak Cellars
Family owned for more than 50 years, Silver Oak has produced cabernets aged exclusively in American oak. Its exceptional, food-friendly wines are both drinkable upon release and worthy of cellaring for decades to come. Ray Duncan founded Silver Oak with Justin Meyer in 1972, and it’s now owned and operated by Ray’s sons, David and Tim, with a commitment to innovative and sustainable viticulture practices across its vineyard properties, winemaking facilities, tasting rooms and cooperage. In addition to acquiring OVID Napa Valley in 2017, the Duncan family also founded Twomey Cellars in 1999 and Timeless Napa Valley in 2020.
