Tavernetta Vail at Four Seasons Resort Vail Introduces Après-Tivo
Tavernetta Vail, the new restaurant from award-winning Frasca Hospitality Group in partnership with Four Seasons Resort and Residences Vail, introduces Après-Tivo, an Italian take on après-ski. Available at Tavernetta Vail’s bar and on the outdoor terrace at Four Seasons Vail, Après-Tivo offers an afternoon happy hour menu ideal for enjoying the ambiance of the largest ski mountain in Colorado. The 20-seat patio features magnificent fire pits and relaxed seating overlooking the pool, Vail Mountain, and beyond, while inside the restaurant, Tavernetta Vail’s solid stone bar nods to the surrounding landscape. The bar’s mirror and bronze backbar radiate a warm incandescence, creating an intimate space where guests can enjoy a glass of wine while recounting the day’s exploits in Vail’s legendary Back Bowls.
As a playful touch, look out for the restaurant’s inviting Spritz Window, a nod to the wine windows found throughout Tuscany and Northern Italy, where guests can “buzz for Spritz” and indulge in a curated menu of the signature après cocktail, such as the San Polo Spritz with Select Aperitivo, Elderflower Liqueur and Grapefruit Soda or a Venetian Spritz with Aperol, Prosecco, and Soda, and more (menu highlights below).
Capturing the rich flavours of Italy’s north and the vibrant tastes of its south, Tavernetta Vail’s Après-Tivo is a love letter to both Italian cuisine and Vail Mountain, showcasing how Italy’s Alpine culture and diverse foods enrich the town’s beloved European-inspired architecture and culture. Inspired by its mountain location as well as the Italian aperitivo tradition of socializing with friends over drinks and light fare before dinner, Tavernetta Vail’s Après-Tivo embodies Sprezzatura Alpina – a detail-oriented yet effortless approach toward the dining experience – giving every occasion a sense of easy, timeless elegance.
Chef de Cuisine Ethan Diamant’s Après-Tivo menu includes both snacks and heartier dishes, from imported Italian meats and cheeses to caviar service and handmade pastas, such as:
- Focaccia with Olive Oil, Red Wine Vinegar, and Grana Padano
- Prosciutto di Parma
- Robiola e Frutta, soft cheese and fruit
- Piatti di Cicchetti, small plates of Marinated Olives, Pickled Vegetables, and Marcona Almonds
- Gorgonzola e Miele, Northern Italian Blue Cheese with Honey
- Arancini made with Carnaroli Rice, Parmigiano-Reggiano and Garlic Confit
- Cacio e Pepe with Pecorino Romano and Black Pepper
- Insalata Mista made with Farm Lettuce, Pickled Shallot, Buttermilk, and Parmigiano- Reggiano
- Burrata with Trapanese Pesto and Focaccia Breadcrumbs
- Regiis Ova Caviar with Crème Fraiche, Chives, and Blini
Tavernetta Vail’s Après-Tivo also includes signature cocktails as well as a selection of Italian wines and Champagne curated by Wine and Beverage Director Carlin Karr and Senior Sommelier Rylan Bonaccorsi. Highlights include:
- Amalfi Spritz with Limoncello, Suze, Prosecco, and Soda
- Stephania with Vodka, St-Germain, Grapefruit, Lemon, and Cinnamon
- Ciao to Veneto with Select Aperitivo, Gin, and Lime
