Taverentta Vail: A Summer of Regional Italian Dining

Throughout the summer season, Tavernetta Vail presents a series of thoughtfully curated dining experiences that celebrate regional Italian cuisine, seasonality, and the pleasure of gathering around the table.

In June, the restaurant presents Taste of Tavernetta, a prix-fixe menu highlighting signature Italian-inspired cuisine. Featuring fresh ingredients and refined yet approachable preparations, the menu offers an ideal introduction to Tavernetta’s culinary ethos in an inviting alpine setting.

During July and August, Tavernetta Vail introduces Mare e Monti: A Sicilian Tasting Journey, a regional dinner experience inspired by Sicily’s dramatic coastline and mountainous interior. The multi-course meal weaves together vibrant seafood, rustic inland flavours and peak-season produce, transporting diners throughout one of Italy’s most iconic culinary regions.

In September and October, Tavernetta Vail continues its regional exploration with Undiscovered Italy: A Friulian Tasting Journey, showcasing Slavic and Austro-Hungarian influences through a menu inspired by the Alps and northeastern Italy.

“Our menus are about storytelling through food,” says Ethan Diamant, Chef de Cuisine. “By focusing on specific regions, we’re able to showcase tradition, technique, and seasonality in a way that feels immersive and celebratory, allowing guests to experience Italy through flavour, right here in the mountains.”

Late Nights and Craft Cocktails at The Remedy

The Remedy sets the tone for summer at Four Seasons Resort and Residences Vail, blending craft cocktail culture with relaxed mountain sophistication.

Throughout the season, Late Night at The Remedy extends evening hours with specialty cocktails and elevated late-night bites, served in a lively yet refined atmosphere. The late-night menu is available from June 4, 2026, Thursdays through Saturdays until 11:30 pm, and includes offerings such as Crispy Truffle Fries, warm Pan de Bono and the signature Jumbo Lump Crab Cake, suited to relaxed end-of-day dining.

For a limited time from May 22, 2026, through June 30, 2026, The Remedy offers a seasonal three‑course prix‑fixe experience that captures the flavours of the changing Alpine seasons. The menu begins with the restaurant’s signature Jumbo Lump Crab Cake, followed by a 12‑ounce Prime New York Strip served with scallops, asparagus and potatoes, and concludes with a warm cookie skillet.

The Remedy also continues its popular Mountain High Cocktail Classes, offering hands-on sessions led by expert bartenders that explore technique, balance and creativity. In 2026, the classes are paired with light bites and highlight seasonal ingredients, with sessions scheduled on June 25, July 30, August 27 and September 24.
