Born and raised in Delhi, India, Chef Pankaj Bisht brings more than 18 years of global culinary experience to his role as Executive Sous Chef at Four Seasons Resort and Residences Vail. His culinary journey began with a three-year apprenticeship at Le Meridien New Delhi, followed by formative roles at luxury hotels including The Oberoi New Delhi, One&Only Royal Mirage Dubai and Jumeirah Emirates Towers.
Chef Bisht’s career expanded in the UAE, where he contributed to the development of several of the region’s leading steakhouses. At Lexington Grill at Waldorf Astoria Ras Al Khaimah, he was part of the team recognised with Best Steakhouse at the BBC Good Food Middle East Awards (2015) and Best Restaurant Team at the Caterer Awards Middle East (2016). He later joined Four Seasons Hotel Abu Dhabi at Al Maryah Island as Sous Chef at Butcher & Still, where the restaurant earned multiple Best Steakhouse distinctions and received recognition from the Gault Millau Awards and inclusion on the World’s 50 Best Restaurants lists.
In 2022, Chef Bisht relocated to Colorado to join Four Seasons Resort Vail as Chef de Cuisine at The Remedy before assuming the role of Executive Sous Chef in 2026. His culinary approach blends refined technique with an appreciation for seasonal mountain ingredients, reflecting Four Seasons’ commitment to quality, craftsmanship and thoughtful hospitality. In 2023, he was recognised for Best Pork Belly at the Taste of Vail competition.
