Four Seasons Resort and Residences Whistler is delighted to announce the appointment of Shiv Kappal as Executive Chef. In his new role, Chef Kappal will lead all culinary operations for Canada’s #1 Resort as recognized by Condé Nast Traveler, including signature restaurant SIDECUT Steakhouse, Braidwood Tavern, and the resort’s evolving culinary program and innovative initiatives.
A Four Seasons veteran with over 18 years of global experience, Chef Kappal brings a spirit of creativity, leadership, and deep cultural curiosity to the Whistler team. From pre-opening kitchens in Mumbai and Abu Dhabi to luxury islands in the Maldives, his journey is a testament to Four Seasons commitment to excellence and talent development.
“Moving from the ocean to the mountains is an exciting transition,” says Chef Kappal. “I’m looking forward to bringing my international culinary experience to Whistler, where food becomes more than just nourishment—it’s an experience that brings people together and tells a story of place and season.”
Chef Kappal began his Four Seasons journey on the pre-opening team at Four Seasons Mumbai and quickly rose through the ranks with key roles at Four Seasons Landaa Giraavaru, Doha, and Abu Dhabi, where he played a pivotal role in launching Café Milano. Most recently, he was the Executive Sous Chef at Four Seasons Resort Maldives at Landaa Giraavaru, overseeing five restaurants and the culinary programming for the private island.
Chef Kappal’s cooking philosophy is rooted in authenticity and restraint. “I love using open-fire grilling to bring out bold, natural flavours. My cooking is inspired by my travels around the world, always with a focus on fresh ingredients, seasonal produce, and time-tested techniques,” he says. “I believe in enhancing the ingredients rather than overcomplicating them—allowing them to shine and be cooked to perfection.”
Beyond the kitchen, Chef Kappal is known for his adventurous spirit. He has travelled to over thirty countries, always seeking culinary inspiration and new cultural experiences. While his free time in the Maldives was spent diving world-class reefs, he now looks forward to swapping fins for skis and embracing the alpine lifestyle. Joining him in Whistler is his wife, Prachi, with whom he shares this exciting new chapter.
