During Cornucopia, Whistler's signature annual food and drink festival, Four Seasons Resort and Residences Whistler will host A Culinary Journey Through British Columbia with Chef Shiv Kappal at SIDECUT Steakhouse on November 13 and 14, 2026. Cornucopia brings together acclaimed chefs, winemakers, distillers, beverage experts and culinary enthusiasts for a multi-day festival of tastings, dinners and immersive culinary experiences throughout Whistler.

Over two intimate evenings, Executive Chef Shiv Kappal will present a multi-course dining experience inspired by the places, flavours and traditions that have shaped his culinary journey across British Columbia. Drawing from the province's diverse landscapes, from the Pacific coastline to the mountains of Whistler, each course reflects Chef Shiv's personal connection to the region and the ingredients that continue to influence his approach to cooking.

“Travelling across British Columbia reconnected me with the beauty of cooking from true origin. Every ingredient here tells a story, and this menu is my way of honouring those stories through the lens of my own journey,” says Executive Chef Shiv Kappal.

Inspired by his travels, the menu explores the province’s rich agricultural and coastal bounty through Chef Shiv’s contemporary lens. From hand-cut bison tartare and Dungeness crab from Pacific waters to wild blueberries and Pemberton potatoes grown just north of Whistler, each dish draws on ingredients that reflect the landscapes and culinary traditions of the province.

Paired with British Columbia wines from Gray Monk, Pentâge, CheckMate and Phantom Creek, the experience invites guests to discover the ingredients, places and stories that continue to shape Chef Shiv’s connection to British Columbia.

Hosted in SIDECUT's private dining room, the experience is designed to be immersive, personal and highly interactive. Throughout the evening, the team will guide guests through the inspiration behind each course, offering insight into the stories, memories and moments that informed the menu.

A Culinary Journey Through British Columbia with Chef Shiv Kappal will take place on Friday, November 13, and Saturday, November 14, 2026, from 6:00 to 9:00 pm at SIDECUT STEAKHOUSE, Four Seasons Resort and Residences Whistler.
