Four Seasons Resort and Residences Whistler introduces the Chef’s Tasting Menu at SIDECUT Steakhouse, an eight‑course culinary experience crafted by Executive Chef Shiv Kappal. The menu highlights British Columbia’s defining flavours interpreted through Chef Shiv’s thoughtful and contemporary approach, further solidifying SIDECUT as amongst the best restaurants in Whistler for elevated dining and wine pairings.
“This tasting menu expresses my arrival and exploration of British Columbia. From its ingredients to its people, and its deep sense of place,” says Executive Chef Shiv Kappal. “My goal was to create an epicurean journey that feels both welcoming and distinctly BC, rooted in the region yet informed by the kitchens that have shaped me as a Chef.”
A Culinary Journey Inspired by British Columbia
Inspired by Chef Shiv’s early explorations across the province, from salmon runs along the Fraser River to foraging in the South Okanagan, the menu highlights signature ingredients from British Columbia while weaving in global culinary elements from his nearly two‑decade international career.
Menu Highlights Include:
- Hand‑Cut Bison Tartare with Northern Divine Caviar – a visually striking presentation of hand‑shaped ice inspired by Chef Shiv’s first encounter with bison.
- Red Carabinero Prawn — a hallmark of Chef Shiv’s global repertoire, paired with BC lavender butter, wild blueberry gel, and maple‑browned morels.
- Nova Scotia Lobster and Dungeness Crab Tagliolini — silky handmade pasta highlighting Chef Shiv’s Italian culinary background.
- King River Wagyu MB9+ — with a Pemberton potato truffle pavé, connecting exceptional Australian beef with one of British Columbia’s most celebrated agricultural valleys.
To complement the experience, guests are encouraged to partake in the curated British Columbia wine pairing, featuring producers from the Okanagan Valley and emerging coastal wineries.
