Auspicious Puddings

Lung King Heen, the first Chinese restaurant in the world to be awarded three Michelin stars, presents four delectable handcrafted New Year puddings that satisfy the discerning palates of guests.

Chinese Executive Chef Chan Yan Tak continuously pushes the boundaries of culinary innovation while preserving cherished traditions. The newly introduced Water Chestnut Pudding with Pink Guava (HKD 580) reimagines the classic pudding by infusing it with pink guava purée from France, resulting in an elevated blend of flavours. The vibrant pink hue adds a touch of celebration, complementing the festive colours of the season. A sweet, light, and refreshing creation, the recipe features the finest Pan Tang water chestnut powder. The skilled chefs meticulously monitor the pudding's temperature during preparation to ensure precision and achieve optimal texture.

The beloved Lunar New Year Pudding with Coconut Milk (HKD 550), a tradition of Lung King Heen since its opening in 2005, returns this year. The Abalone and Turnip Pudding with Conpoy (HKD 680) offers a savoury option and adds an element of surprise by introducing two South African abalones, with one diced and mixed into the turnip paste while the other sits on top of the pudding. It features a high proportion of turnip, prepared in thick slices for a substantial mouthfeel, and is accentuated by the umami flavour of premium dried shrimp, mushrooms, and dried scallops from Sōya, Japan.

Taro Pudding with Black Truffle and Air-dried Meat (HKD 680) is a recipe created by the chef after dedicated trial and error. The dish features a golden ratio of air-dried meat, mushrooms, and black truffle. Mushrooms are fried before being added to the pudding for a rich aroma.

Puddings are available to order online while stock lasts. Guests can enjoy 15 percent savings for purchases made on or before January 10, 2024. The collection period is from February 2 to 9, 2024, at the Cake Shop from 10:00 am to 8:00 pm daily. For enquiries, contact Cake Shop at (852) 3196 8708 or shop.hkg@fourseasons.com.

A Celebration of Winter Flavours with Poon Choi

Poon Choi, or Winter Casserole, is a time-honoured tradition where people come together to share a feast. Chinese Executive Chef Chan Yan Tak has created a Poon Choi (HKD 4,688) that serves groups of four people and features a curated selection of 16 ingredients, including dried fish maw, South African abalone, dried scallops, and Chinese mushrooms. The dish also includes barbecued siu mei delicacies such as roasted goose and poached chicken from Lung King Heen, topped with wok-fried king prawns with salted egg yolk that give a festive gold colour. In addition, a pot of abalone juice will be offered alongside the Poon Choi for reheating at home.

Poon Choi will be available to order online until February 14, 2024, or while stock lasts. Orders must be made at least 48 hours in advance.
