Setting the table for a celebration of traditional flavours and contemporary finesse, this restaurant will play host to a three-night culinary journey in collaboration with acclaimed Italian chef Alessandro Tormolino. As part of the 16th edition of the Italian Cuisine World Summit 2025, gastronomes can expect the finest ingredients and innovative plates, all carefully crafted to captivate the senses and capture the timeless tastes of Italy.

As one of the longest-running events promoting Italian cuisine, restaurants, and produce, the Italian Cuisine World Summit is the ultimate showcase of the country’s culinary heritage. This year’s edition will spotlight the UAE’s top Italian restaurants through a series of events taking place across Dubai and Abu Dhabi, aimed at enhancing cultural and culinary dialogue within the region. It also seeks to honour restaurants such as Cafe Milano for their refined blend of tradition and creativity that continues to shape contemporary Italian cuisine.

As one of the hotel's most beloved dining destinations, Cafe Milano effortlessly evokes the spirit of La Dolce Vita through its elegant setting, fresh Italian flavours, and tranquil waterfront views. Helmed by Corporate Chef Franco Sangiacomo, the venue is a sophisticated outpost of the famed Washington, DC institution. Bringing a taste of the Amalfi Coast to the capital, its timeless menu of handmade pastas, fresh seafood, and regional specialities is beautifully complemented by both a chic indoor setting and a breezy terrace.

Joining the talented team from November 5 to 7, 2025 is renowned Italian chef Alessandro Tormolino. Celebrating his country’s rich culinary heritage in everything he does; Alessandro has spent the past 15 years working alongside some of the world’s most acclaimed chefs and was awarded the prestigious international La Liste prize in 2019 in the Young Chef category. A member of the JRE Italy association since 2021, which unites some of the finest kitchens globally, he is known for his passion for traditional cuisine with inventive flair. As owner and Executive Chef of Sensi in Amalfi, he earned a Michelin star in 2022.

In honour of the 16th Italian Cuisine World Summit 2025, Chef Alessandro will work alongside the team at Cafe Milano to craft a sumptuous culinary journey. Over the three nights, guests can choose to savour the full experience with a four-course set menu or opt to enjoy the individual plates à la carte. Running from 6:00 pm to 12:00 midnight, the journey begins with Il Gambero, a delicate shrimp in turmeric tempura served atop a silky Amalfi lemon potato cream and finished with a whisper of seaweed powder for a touch of coastal elegance.

As the evening unfolds, the contemporary Italian creations continue with Il Tubettone, featuring al dente pasta tossed with sweet yellow tomatoes, tender clams, earthy black garlic, and fresh glasswort. The experience then moves to La Spigola, a perfectly seared seabass paired with tender broccoli, anchovies, and a delicately smoked sauce. To conclude, Il Limone offers a bright and refreshing finale with a soft lemon sponge elevated by silky lemon sauce, crisp meringue, and a fragrant lemon and basil sorbet.
