Four Seasons Hotel Amman Announces Collaboration Dinner with Michelin-Starred Chef Miller Prada
Khalid Ballout, Chef de Cuisine at La Capitale, partners with Chef Miller and artist Cara Janelle for a highly anticipated collaboration dinner at the Jordan International Food Festival
Four Seasons Hotel Amman announces that Khalid Ballout, Chef de Cuisine at La Capitale Brasserie, is partnering with Michelin-starred Chef Miller Prada and ceramic sculptor and artist Cara Janelle for a highly anticipated collaboration dinner on Saturday, August 9, 2025 at the Jordan International Food Festival (JIFF).
Chef Miller describes the collaboration dinner menu, saying, “I’m genuinely excited to visit Jordan, explore its culture and cuisine, and weave those inspirations into the menu. A very important part for me is to support the humanitarian efforts and donate all proceeds to the children of Gaza. Together we have created a menu especially for the Jordan International Food Festival that combines my Colombian heritage and culinary training. Identity, excellence, and respect for ingredients are extremely important in my cuisine, and I can see this reflected in the culture in Jordan as well.”
Chef Khalid adds, “The collaboration dinner menu represents a very personal style of cooking infused with Jordanian products and spices such as kunafa dough as well Jordanian beef, beetroot, sumac and za’atar, taking our guests our a very unique culinary journey.”
The collaboration dinner includes a five-course menu that kicks off with an amuse-bouche of delicately fried salmon wrapped in crisp kunafa threads; moving onto the local lamb beignet infused with Jordanian spices; then the lobster sashimi with clay-baked Jordanian beetroot; followed by spaghetti filled with organic chicken, wild mushrooms and topped with a silky jus; then a unique dish with crispy rice, rich Colombian coffee from Chef Miller’s family farm, dusted with Jordanian sumac; then the slow-braised Jordanian beef cheeks, organic corn foam and za’atar potato. The finale is dessert, which is a caramelized black olive, puff pastry, candied lemon, and premium Jordanian extra virgin olive oil ice cream.
About the Chefs
With more than 18 years of experience working in some of the world’s best kitchens, Chef Miller became a Michelin-starred chef at 33 after winning the accolade for his debut restaurant, Humo London, launched in early 2023. Under Chef Miller’s leadership, Humo achieved its Michelin Star in under a year. Other accolades include #64 in the National Restaurant Awards, 3 AA Rosettes, New Opening of the Year 2023, and being named The One to Watch in 2023 by Great British Chefs.
Born in 1990 in Bogotá, Colombia, Chef Miller is enthusiastic about honing his skills to become one of the very best. His journey took him to top restaurants, including Pollen Street Social (London, one Michelin star), La Mar (Bogotá), The Ledbury (London, three Michelin stars), and Endo at Rotunda (London, one Michelin star), where he became head chef. He played a key role in the openings of Rotunda and Sumi and later became group executive chef at Creative Restaurant Group. In late 2025, Miller will launch his flagship restaurant CALLE.
Chef Khalid is from Ramallah, Palestine, but he was born in Amman, Jordan. His father worked in the hotel industry, so it has been in his blood since he was a young boy.
Khalid started his career at Four Seasons Hotel Amman back in 2012 in the position of Cook 3. To enhance his experience and further develop himself, Khalid completed task forces in Saudi Arabia at Four Seasons Hotel Riyadh and France at Grand-Hôtel du Cap-Ferrat, A Four Seasons Hotel. Khalid’s drive, passion and commitment led him to the signature brasserie at Four Seasons Hotel Amman, La Capitale, where he was the Junior Sous Chef learning from the French chef de cuisines that headed the restaurant. That catapulted him into the role of Sous Chef, acting as the Head Chef of La Capitale back in 2021, and he has been Chef de Cuisine since 2022.
Jordan International Food Festival
Four Seasons Hotel Amman is also highlighting its culinary excellence by participating in the JIFF from August 6 until 11, 2025 with daily menus that showcase the restaurants and lounges at the property so guests can select the cuisine that matches their tastebuds.
On August 6 and 7, enjoy a selection of popular dishes from The Foyer Lounge, the living room of the Hotel. On August 8 and 9, indulge in Southern California cuisine from FIVE Grill & Lounge. On August 10, experience the taste of French classics with signature dishes from La Capitale Brasserie. On August 11, savour Japanese Nikkei flavours from SIRR Japanese Lounge.
JIFF is Jordan’s premier annual culinary event, established to showcase the richness of Jordan’s food culture and its role in the global culinary scene. Held annually in the heart of Amman, the festival brings together food lovers, renowned chefs, and international culinary experiences in a vibrant celebration of flavour, creativity, and culture. The Jordan International Food Festival will donate all proceeds from ticket sales to support children in Gaza.
