French Brasserie at Four Seasons Hotel Amman Curates Winter Menu Using the Finest Truffles in the World

Guests of La Capitale Brasserie, located at Four Seasons Hotel Amman, are invited on a culinary journey from February 17 until 28, 2025, as Chef de Cuisine Khalid Ballout, and Executive Chef of the Hotel Andrea Franceschi curate a three-course menu featuring the Périgord black winter truffle, considered one of the finest truffles in the world.

Périgord truffles come from the Périgord region in southwestern France. This area has the perfect climate and soil conditions for growing truffles, particularly the black winter variety.

Ballout says, “I look forward to seeing guests of La Capitale really enjoying this curated menu. We will be offering Wild Carpaccio, Velouté de Champignons de Paris, which is a creamy mushroom truffle soup, and a mouthwatering Turbot Sous Vide, which is a slow-cooked wild turbot. For dessert, guests can enjoy a chocolate cream sphere with black truffle marmalade. Or, you can choose to add truffle to any of your favourite dishes from the a la carte menu.”  

Périgord truffles have been celebrated in French cuisine for centuries. They offer a distinct, earthy, and aromatic flavour with subtle hints of chocolate, forest floor, and garlic. The flavour profile is more intense compared to other types of truffles, which makes them highly prized by chefs and gourmands. They are harvested in the winter, usually between November and March. This seasonality adds to their exclusivity, as they are only available for a limited time each year.
