A true artist in the world of pastry, Chef Andrea Bonaffini is celebrated for his innovative vision and masterful technique, blending classical European foundations with bold, contemporary creativity. With more than 20 years of experience across some of the world’s most dynamic culinary capitals, he has crafted a signature style that is both sophisticated and delightfully unexpected—always rooted in joy, meticulous detail, and genuine care for those he serves.

His journey has taken him from the boundary-pushing kitchens of The Fat Duck, the three-Michelin-starred icon in the United Kingdom, to founding Yellow Lemon, Asia’s pioneering dessert bar in Taipei, where he first introduced his unique approach to flavour and form.

Now acting as Executive Pastry Chef and leading Cafe Madeleine at Four Seasons Hotel Bangkok at Chao Phraya River, Chef Andrea infuses each creation with French finesse and Italian soul. His signature cakes—Strawberry Shortcake, Tiramisu, and Pecan Rocher—reflect his devotion to ingredient integrity, textural harmony, and sensory delight. The café itself captures the essence of European café culture: unpretentious, vibrant, and inviting, where freshly baked croissants, seasonal cakes and petite mignon, and elegant pastries provide the perfect accompaniment to leisurely moments by the river.

Beyond his culinary skill, what truly sets Andrea apart is his personality: easy-going, deeply genuine, and endlessly curious. Having lived and worked across Japan, China, Hong Kong, Singapore, Taiwan, and now Thailand, he embodies a global perspective and palate, creating flavours that are at once familiar and bold, comforting yet surprising. Described as a bridge between cultures, Andrea connects effortlessly with people, empowering his team and inspiring collaboration.

“Dessert is the final word of a meal, and it should always leave a lasting impression,” he says with a smile. “I believe every dish tells a story, and through dessert, I want to create moments of happiness that guests will remember.”

Reflecting on his passion, Andrea adds, “I’ve always felt a kinship with Asia. The people, the culture—they inspire me daily to explore new flavours and push my creativity.”

When asked about his vision for the future, he shares, "My ambition is to continually evolve—sparking fresh collaborations and bringing bold new ideas to life. I aim to create unforgettable experiences that beautifully blend tradition with innovation, elevating not only Cafe Madeleine but also introducing a signature afternoon tea that will set a new standard and leave a lasting mark on Bangkok’s vibrant culinary scene.”

Whether nurturing his team, dreaming up new creations, or quietly perfecting his craft, Chef Andrea’s approach remains the same: thoughtful, artistic, and always served with joy.
