A Sip of Spring: Four Seasons Hotel Beijing Invites Guests to Indulge in the Essence of Spring with its Spring Matcha Afternoon Tea

Harvested by skilled tea farmers, tender tea leaves imbued with the essence of nature are finely ground to create a delicate, verdant powder. This matcha, infused with the spirit of spring, awakens a sense of renewal and vitality. Four Seasons Hotel Beijing pays homage to the art of Zen tea, blending its delicate sweetness into an exquisite Spring Matcha Afternoon Tea, where every sip and bite evokes a timeless journey from bitterness to lasting sweetness.

Matcha Tangerine captures the vibrant freshness of a lush spring forest — subtly bitter at first, before melting into a lingering, sweet aftertaste. Matcha Raspberry Mochi, with its soft, glutinous texture, reveals a rich matcha filling intertwined with tart raspberry, reminiscent of lively birds flitting among spring blossoms. Blond Matcha and Apricot Tart delicately wraps silky matcha cream around luscious apricot, where the fruit’s natural sweetness harmonises with the matcha’s earthy notes. Sakura Matcha Pudding presents a dreamlike contrast: a jade-hued pudding floating in a translucent sakura-infused jelly, adorned with a delicate cherry blossom, adding a poetic touch of springtime romance.

The Shrimp Roulade with Candied Orange Peel and Matcha Yuzu Jelly combines succulent shrimp with citrusy-sweet candied orange peel, while the matcha-infused yuzu jelly adds a bright, refreshing accent. The Miso Marinated King Salmon with Caviar and Matcha Tart introduces layers of umami — miso-enhanced salmon meets the briny burst of caviar, all encased in a crisp matcha tart shell, evoking the serenity of a spring forest. The Matcha Chicken Salad with Melon and White Asparagus Purée offers a balance of savoury and refreshing flavors, as tender chicken and creamy white asparagus purée meet the juicy sweetness of melon. The Mortadella Sandwich with Matcha Mascarpone reinterprets a classic with soft bread, aromatic mortadella, and a smooth matcha mascarpone spread, where the umami-rich ham meets the delicate fragrance of tea.

No afternoon tea is complete without the timeless indulgence of scones. The Red Bean and Cranberry Matcha Scones bring a seasonal twist to tradition. Tender red beans nestle within the matcha-infused dough, while the tartness of cranberries balances the tea’s earthy depth. Accompanied by silky clotted cream, fragrant strawberry jam, and orange marmalade, these scones offer a taste of spring’s warmth and sweetness in every bite.
