With a career shaped by curiosity, discipline and a deep-rooted love of food, Danish Merchant brings more than 20 years of culinary experience to his new role as Director of Culinary, Food & Beverage at Four Seasons Hotel Cairo at The First Residence, a luxury hotel in Giza, situated between the Nile River and the Pyramids of Giza.

For Danish Merchant, cooking was never simply a profession waiting to be discovered. It was a passion that found its way back to him; first through the familiar comfort of his mother’s cooking, and later through a career that would take him across some of the world’s most distinguished luxury hotels in India and Qatar.

Today, as Director of Culinary, Food & Beverage at Four Seasons Hotel Cairo at The First Residence, Danish brings with him more than two decades of global experience, a wealth of operational expertise, and a personal culinary philosophy rooted in craftsmanship, consistency and the simple joy of bringing people together around a table.

 Danish began his professional career in sales and related fields before discovering that his true calling lay in the kitchen. Inspired by the flavours and memories of home, particularly his mother’s cooking, he made the transition into culinary; a decision that would ultimately shape his lifelong career.

Over the years, Danish has led large and diverse culinary teams, managed complex kitchen operations and worked in some of the most demanding environments within luxury hospitality. Among the defining chapters of his career was his involvement in large-scale outside catering operations during the football tournament in Qatar, where the scale, pace and precision required further strengthened his leadership and operational expertise.

Indian and Italian cuisines hold a special place in Danish’s culinary repertoire. Having begun his culinary career in an Italian restaurant, he developed a particular appreciation for the cuisine’s emphasis on fresh ingredients, generous flavours and its innate ability to bring guests together. Indian cuisine, however, is closer still to his heart; quite literally, as he describes it as being “in his DNA.”

At Four Seasons Hotel Cairo at The First Residence, Danish is looking forward to sharing more of this heritage through thoughtfully created Indian-inspired dishes, while continuing to explore the rich culinary landscape of Egypt. Among the hotel’s restaurants, Nairu is already a particular favourite.

His curiosity about Egyptian cuisine has led him to dishes that speak to him not only through flavour, but through the craftsmanship behind them. Egyptian Fiteer Meshaltet has especially captured his imagination, with its delicate, paper-thin layers reflecting the patience, technique and care that lie at the heart of great cooking.

It is this spirit of culinary discovery that inspires one of Danish’s most exciting concepts: his “Nile-Kerala Moilee.” Bringing together Nile perch with coconut milk, ginger, garlic, Egyptian dukkah and fragrant local rice, the dish is envisioned as a culinary conversation between two cultures; the richness of Egypt’s Nile and the vibrant culinary traditions of Kerala.

Danish hopes to build on the property’s culinary identity through new techniques, thoughtful innovation and a strong appreciation for the ingredients of Egypt. His approach is one of marrying international experience with a genuine respect for local produce, flavours and culinary traditions.

His philosophy extends beyond the kitchen. Inspired by Jerry West’s words, “You can't get much done in life if you only work on the days when you feel good,” Danish believes that consistency and discipline are fundamental to true professionalism. It is a mindset that has guided him throughout his career and continues to shape the way he leads his teams.

Away from the kitchen, Danish finds inspiration in documentaries and the work of acclaimed chef Thomas Keller, whose approach to precision, discipline and culinary excellence resonates deeply with his own philosophy.

His chapter at Four Seasons Hotel Cairo at The First Residence is one of cultural exchange; bringing together the flavours and traditions of his Indian heritage, the perspective gained through an international culinary career, and the extraordinary richness of Egypt.
