Danish Merchant, a culinary professional, brings over 20 years of experience to his role as Director of Culinary, Food & Beverage at Four Seasons Hotel Cairo at The First Residence, having worked primarily across luxury hotels in India and Qatar. His career began outside the culinary world, in sales and related fields, before he discovered his true passion for cooking; a passion strongly influenced by his mother’s cooking and which has since become a lifelong profession.

Throughout his career, Danish has led large culinary teams and demanding kitchen operations. A significant highlight was his involvement in large-scale outside catering events throughout the football tournament in Qatar, an experience that further strengthened his leadership and operational expertise.

Danish’s favourite cuisines to prepare are Indian and Italian. Having started his culinary career in an Italian restaurant, he particularly appreciates Italian cuisine for its fresh ingredients, rich flavours, and ability to bring guests together. Indian cuisine, meanwhile, is “in his DNA,” and he is excited to introduce more Indian-inspired dishes to the hotel menu. At the hotel, Nairu is his favourite restaurant.

As he explores Egypt’s culinary heritage, Danish is particularly drawn to Egyptian Fiteer Meshaltet, admiring the skill and patience required to create its delicate, paper-thin layers. He also looks forward to developing his “Nile-Kerala Moilee,” combining Nile perch, coconut milk, ginger, garlic, Egyptian dukkah, and fragrant local rice to create a bridge between Egyptian and Indian culinary traditions.

His comfort food is simple: French fries with tomato sauce, a dish he often relied on during short breaks while managing busy kitchen brigades. Danish is eager to bring new techniques and innovative concepts to the property while incorporating local Egyptian ingredients and flavours.

Inspired by Jerry West’s words, “You can't get much done in life if you only work on the days when you feel good,” Danish believes consistency and discipline are at the heart of true professionalism. Outside of work, he enjoys watching documentaries and draws inspiration from renowned chef Thomas Keller.

For Danish, cooking is about craftsmanship, teamwork, and creating experiences that connect with guests through the five senses; combining his Indian heritage and international culinary expertise with Egypt’s rich local culture to make every dining experience truly memorable.
