"It all began with a summer job as a kitchen steward in a restaurant called The Shamrock Chinese Restaurant in Limerick, Ireland. Oddly enough, it still exists today," reminisces Robert Prendergast, Executive Chef at Four Seasons Hotel Cairo at The First Residence.
"Ever since I can remember, I have always felt like I was destined to become a chef," says Robert. His passion for cooking started when he was a little boy, silently and attentively, watching his mother cook every day. "I still vividly remember the smell of fresh herbs cooked in butter or wine," he says. "It is one of the best boyhood memories I have."
As Robert grew up, so did his curiosity to learn more about creating new flavours. "I have been in kitchens for 30 years. Wow, that even amazes me, sometimes. But what an adventure to be on," says Chef Robert, reflecting on the hustle and bustle of the kitchens that have become his second home over the years.
After learning about cooking, Robert was faced with a crucial question, and that was how he can stand out as a chef on the global culinary scene. "It takes courage, hunger, vision, passion, a deep-seeded need for a connection. It all can be done if you are just willing to ask for an opportunity and try it," adds Chef Robert. "I didn't just want to prepare good dishes. I wanted to cook new, trendy, and exciting dishes. For me, I could only achieve that by using local ingredients and produce to cook my own signature dishes."
Beyond crafting the art of culinary, Chef Robert has re-directed his focus as well on the well-being and growth of his team. “It takes a lot of responsibility, and I am very well-aware of my role as an Executive Chef that one of my duties is to make sure that my team always shows up every day motivated, feeling inspired and always eager to create more,” explains Chef Robert, reflecting on his leadership style and the environment he creates within the Four Seasons family.
Armed with knowledge and love for cooking by using herbs, spices, and butter, Robert has always been eager to learn not only from his mom or dad but from other renowned chefs around the world. "There are legends out there creating and inspiring every day. I have been blessed to work with amazing chefs over the years, but Tom Aitkens has always stood out for me." acknowledges Chef Robert.
"Passion, action, and noble intention create progress," shares Chef Robert, encapsulating his work philosophy in a powerful mantra.
Applying his cooking skills and knowledge to Egypt's culinary wealth has allowed him to create new bespoke flavours and dishes. It didn't take long until he discovered the beauties and culinary intrigue of Egyptian cuisines. "I immediately fell in love with Egypt's produce, herbs and recipes that are authentic, bursting with flavour, and always served with heart and passion," he says.
Beyond the kitchen, Robert enjoys hiking, sailing, and exploring new cultures and cuisines. “We are blessed with one life in this world, so go out there and enjoy everything that makes your face and soul smile," he shares, highlighting his love for adventure outside the kitchen.
