Inspired by the coastal city of the same name – one of the oldest continuously inhabited cities in the world no less – Byblos invites guests, locals, and international travellers at work or on holiday in the capital of Egypt to enjoy the freshness, quality and authenticity of Lebanese cuisine as only Four Seasons can deliver it, with an oasis-like setting designed by renowned French interior designer Pierre-Yves Rochon, whose architectural innovations can be found at Four Seasons properties around the world, and Four Seasons service standards as essential elements of the experience.
Byblos opened in Cairo at the just right moment as Lebanese concepts originating from kitchens of Beirut are taking the city’s dining scene by storm. But the finesse, aesthetics and, most importantly, dishes of the Hotel’s newest outlet are created to excite.
Temptations for the eyes and palate are on the menu, with dishes featuring a melange of colours, bouquets and tastes. Imagine lunches and dinners of grilled meats, fresh seafood, and vegetarian dishes highlighted by the sharp perfumes of spices, fresh organic produce, and home-made specialties from hummus and yoghurt to breads and cheeses.
The head talent in the kitchen of Byblos is Chef de Cuisine Wissam Kayrouz, who conceives the menus as well as trains and leads the culinary team. A recent arrival to Four Seasons, Chef Wissam traces his passion for Lebanese cuisine to his childhood in Lebanon, where he embarked on a culinary journey with kitchen-focused study in hospitality.
Chef Wissam has strong culinary experiences including leading the kitchens of Lebanese restaurants in key regional positions in Lebanon and Cairo.
His debut menu for Byblos gets to the heart of Lebanese cuisine with inspired dishes from his home town perfect for sharing including hot and cold mezzeh, introducing new signature Lebanese specialties such as Fattah dishes, and distinctive specialties bursting with regional flavours served family-style such as braised char-grilled lamb shank, Lebanese mashawi, and grilled lamb chops – the last two cooked over charcoal and accompanied by a spread of condiments and sides.
“Lebanese cuisine is my passion and I’m thrilled to share it with our guests at Byblos,” says Chef Wissam. “As with each of the Hotel’s dining concepts, the quality of ingredients and skill of the team are what sets Byblos apart on Cairo’s diverse Lebanese dining scene.”
The final course is never to be missed at Byblos, with inspired signature Lebanese desserts created by Executive Pastry Chef Yehia Ahmed, who has led the pastry kitchen at Four Seasons Hotel Cairo at Nile Plaza since its opening in 2004. Chef Yehia’s “Lebanese Sweet Treats” include Lebanese layered baklava, Tarabolsi rice pudding, and kunafa pistachio, each accompanied by ice cream of distinctive flavours.
A relaxed atmosphere greets diners at Byblos, which occupies an indoor and outdoor setting located on the poolside oasis. Bright and inviting, the restaurant’s soothing interior reveals beige banquettes and walls, tall white columns, a mirrored ceiling paned like a French door, and eye-catching greens and blues reminiscent of the Beqaa Valley of eastern Lebanon in floral patterns on pillows, wall art and decorative ceramics.
Dark green marble flooring inside extends to patio outside, where it spends much of the day striped with shadow from sunlight beaming through a slatted wood roof, as diners glimpse the wide blue sky and broader pool area through well-tended greenery. The patio is also the setting for shisha, with exotic water pipe flavours to enjoy under the stars.
