Nestled in the heart of the city, this cozy lounge offers a fusion of Latin and Asian cuisine crafted by Executive Chef Benat Alonso, complemented by signature sushi from Head Sushi Chef Emmel Muya. Upper Deck Lounge is designed by renowned French interior designer Pierre-Yves Rochon and his Paris-based design studio PRV. Rochon’s design encourages guests to settle in and stay awhile, with interiors separated into cozy lounge spaces with soothing pastel tones that brighten in natural light through floor-to-ceiling windows. Sink into bamboo and rattan seating softly cushioned in shades of green, and comfy L-shaped sofas outfitted with individual TV lounge units for small parties to gather and cheer on of-the-moment sporting and entertainment events.
Al fresco dining areas of Upper Deck Lounge are just as inviting, with comfortable seating at small tables overlooking the pool deck, and the same L-shaped sofa-style setups before extra-large outdoor TV screens. Shisha is also available outdoors, and there are private areas for groups to enjoy intimate occasions amid the fresh air, sunlight, and starlight, with attentive Four Seasons service ensuring good times.
Chef Alonso drew upon his Spanish heritage, world travels, and copious connections for locally and internationally sourced ingredients to imagine an all-new Latin-Asian fusion concept featuring global flavours. The menu offers dishes sized primarily for sharing, with highlights including Hamachi crudo with pickled jalapeño, pine nuts, basil, and lemongrass ginger dressing; Grilled Tenderloin with brioche, barbecue tomato, camembert cheese, steak sauce, and chives; and Sea Bass Sudado with garlic steamed rice, spring onion, and ginger soy sauce. Dessert selections guarantee diners’ sweet finishes, such as Poinono with dulce de leche Swiss roll, coffee, and cream.
Chef Muya, whose talent for raw seafood is also on display, offers a menu of his own featuring signature sushi offerings with modern twists, such as Flamed Dragon with jalapeño crispy prawn tempura, seven spice pepper, and sriracha sauce; and Bulgogi Beef with barbecue-spiced beef, cucumber, pickled radish, and spring onion.
And to drink? The creative beverage menu of Upper Deck spotlights cocktails including the signature Maple Old Fashioned with bourbon whiskey, bitters, maple syrup, and cinnamon sticks, as well as refreshing alcohol-free mocktails such as Elderflower Spritz with cranberry juice, sparkling water, lemon elderflower syrup, and mint. The full bar is also the source for local craft beers, wines by the bottle and glass, and the finest spirits, liqueurs, aperitifs, and digestifs.
