Chinese-Thai Culinary Fusion: Exclusive Four Hands Dining at Four Seasons Resort Chiang Mai

January 23, 2025,
Chiang Mai, Thailand

Embark on a culinary journey like no other as Four Seasons Resort Chiang Mai presents a one-of-a-kind “Four Hands” dining collaboration. For two exclusive nights, Michelin Guide-recommended restaurant Khao by Four Seasons will host a special event bringing together Chef Albert Li, Chinese Executive Chef at Four Seasons Hotel Tianjin, and Chef Naruchit Taingtrong, Executive Sous Chef at Four Seasons Resort Chiang Mai. Together. These two distinguished chefs will offer guests a truly exceptional dining experience that merges the best of Thai and Chinese culinary traditions.

This collaboration will enhance the dining experience by offering guests a diverse range of tastes and a fusion of two different culinary cultures. Chef Albert Li, from the renowned Chinese restaurant at Four Seasons Hotel Tianjin, is eager to share his culinary knowledge and expertise, working alongside Chef Naruchit to create something truly unique. The result is a meticulously curated set menu where each chef presents their own selected dishes. These dishes, while rooted in their respective culinary traditions, are designed to complement each other, blending both Chinese and Thai flavours harmoniously.

Culinary Mastery of Chinese and Thai Flavours

From March 1 to 3, 2025, guests will have the chance to savour the chefs’ creative offerings. "This collaboration is a celebration of culinary artistry, blending the bold and diverse flavours of Chinese cuisine with the fragrant and complex notes of Thai cooking," shares Chef Naruchit. "Together, we aim to create dishes that tell a story of heritage, innovation, and the seamless fusion of two distinct cultures," adds Chef Albert Li.

Signature dishes from both chefs will include Honeyed Barbecued Pork Belly, Fresh Abalone Tom Yum Soup, Steamed Egg Tiger Prawns with Pomegranate Vinegar, and Deep-Fried Beef Short Ribs with Lime, Fried Bag Dumpling with crab meat, and Stir-fired Crispy Catfish in Curry Paste, each carefully selected for its ability to showcase the strengths of both Thai and Chinese culinary traditions. This balanced set menu promises a memorable dining experience where guests can explore the harmonious blend of rich, bold flavours from both cuisines.

Interactive Culinary Masterclass at Four Seasons

As part of this exceptional collaboration, Chef Albert Li will take over Rim Tai Kitchen for a special cooking class, traditionally known for its Thai culinary offerings. This rare opportunity allows guests to learn directly from Chef Albert Li, who will guide them in preparing his specially curated menu. "It’s an honour to share my culinary creations and guide our guests through the art of crafting my special recipes," says Chef Albert. "Normally, Rim Tai Kitchen offers Thai cooking classes, but during these days, we’ll be focusing on a unique menu that combines both Thai and Chinese influences. I’m excited to share the nuances of Chinese cuisine and show how it can beautifully complement Thai ingredients and techniques."

This special experience offers guests the chance to engage with Chef Albert Li, ask questions, and gain valuable insight into Chinese culinary traditions, all while exploring the fusion of flavours that define the collaboration.

Bridging Cultures at Four Seasons Resort Chiang Mai

“For me, food is not just about taste; it's about connection between cultures, ingredients, and people,” says Chef Albert Li. “This event is a unique opportunity to share and learn from each other’s culinary traditions, and I’m thrilled to be part of this special exchange.”

Chef Naruchit shares the same sentiment, adding, "By combining our strengths and showcasing the diversity of our cuisines, we’re offering guests an unforgettable dining experience that bridges cultural boundaries. Every dish tells a story of where we come from, blending the essence of tradition with the creativity of modern techniques.”

A Culinary Celebration Amid Chiang Mai's Lush Paddies

Set against the picturesque backdrop of lush rice fields, these events promise an immersive experience that goes beyond just food. “At Four Seasons, we are committed to creating meaningful moments for our guests,” says Resort Manager Anthony Tschudin. “This collaboration is a testament to our dedication to celebrating culinary diversity and excellence.”
