In the Mood

In this evocative setting, with so many tropical elements to inspire, Ratree Bar’s mixologist Ampon Pinpumboonchu displays his skills with a range of exquisite sundowners and cocktails. Learning his skills under the mentorship of Javier de las Muelas, a legend in the world of mixology, Ampon is passionate about his craft. “Come along with me on a journey through the Thai countryside,” he says, as his repertoire of cocktails is constantly evolving to reflect the bounty of this tropical nation.  Bold tropical flavours and fresh seasonal fruit are at the core of each of Ampon’s signature cocktails, as he conjures up a tropical twist for every sip. “Look for a little taste of Chiang Mai in some of his most recent creations,” suggests Anthony.

Coco: An Ode to the Tropics

Elevating the rich creamy flavour of coconut with the rusticity of raw palm sugar, this refreshing summer drink features 7 year Havana rum infused with locally sourced virgin coconut oil. “Perfectly balanced to deliver just a hint of sweetness, this is an ode to the tropics you can’t resist,” smiles Amphon.

Big Cherry: Bright and Bubbly

In this delightfully effervescent glassful, the sophisticated notes of American Bourbon are livened with the infusion of fresh cherries and Thai lemongrass. A dash of sparkling wine and a slice of lemon further lightens the mood in this winning cocktail concept.  “The sweetness of the cherries helps mellow the somber notes of bourbon,” the bartender grins, adding, “The infusion serves as a stage, while the lemongrass and sparkling wine dance on the palate.”

Wild Kitchen: A Tale of Zest

Blended from a vibrant infusion of ginger and lemongrass in gin, this zesty cocktail has a few tricks up its sleeve. Some sweetness from a berry liqueur, a drop of honey, and a hint of freshness from some apple and lemon, make this a complex yet spirited drink.

Bee’s Knees: Humming with Honey

Crisp and citrusy all at once, this delightful creation combines the unique flavour of local longan honey with classic gin and lime. The floral notes of the longan lend an aromatic touch to the honey, which travels to the tongue with every sip. “This truly is a Chiang Mai inspired cocktail!” says an emphatic Amphon.

Cultural Heritage in a Glass

“These are not just fanciful creations,” confirms Anthony. “Our cocktails are carefully conceptualized by Amphon to represent a little taste of Chiang Mai and the surrounding countryside.” In a region of Thailand that is abundant with orchards and exotic fruits, Ratree Bar’s signature cocktails help bring a taste of Chiang Mai in every sip.
