Flavours of Spring

Sakura Spring Afternoon Tea. Unfurling in shades of pink, this polished showcase unites French elegance and Japanese artistry, with egg and rabbit motifs bringing a touch of whimsy to the table – a nod to Easter’s playful spirit. Beverages, too, are crafted to complement the seasonal transition, beginning with a welcome drink evoking the mimosa flower – a vibrant symbol of spring in Europe – followed by signature libations that capture the arrival of sakura and shimmering new greenery.

Springtime Sweets. Limited-time creations honour the season’s singular charms:

Cherry Blossom and Fruits Noirs Tart. Delicate sakura meets the deep vibrancy of fruits noirs in this poised tart. Cherry blossom aromas mingle with luscious berries atop a crisp base, with a ruby-hued blackberry and cassis compote softly enveloped by sakura chantilly cream, its graceful curves recalling the dance of falling petals. In the tradition of a true grand finale, the lingering aftertaste is worthy of an encore.

Chamomile Mousse, Kumquat and Blood Orange Confiture. For Executive Pastry Chef Michele Abbatemarco, spring is the season of Easter and tulips.
