At One-Ninety Bar, a seasonal menu draws inspiration from La Dolce Vita, reflecting the flavours of an Italian summer with bright, refreshing and layered compositions. Thoughtfully conceived in collaboration with Executive Pastry Chef Andrea Bonaffini of Four Seasons Hotel Bangkok at Chao Phraya River, alongside Executive Chef Patrick Benedetti and Chef de Cuisine Valerio Pierantonelli of Four Seasons Hotel Singapore, the three Italian‑born chefs present a collection of offerings celebrating the vibrancy and indulgence of the season.

Executive Pastry Chef Andrea Bonaffini, from Turin, the capital of Italy’s Piedmont region, brings his Italian pastry expertise to the creative direction of The Italian Job Afternoon Tea at One-Ninety Bar. His contributions set the foundation for a menu inspired by regional traditions and contemporary interpretations. Working alongside Executive Chef Patrick Benedetti and Chef de Cuisine Valerio Pierantonelli, the Italian‑born trio draws on culinary influences from Florence and Rome, reflecting regional character, Mediterranean flavours and long‑standing culinary traditions.
The menu presents a selection of sweet offerings inspired by Italian desserts, ranging from Pistachio–Orange Raviolo to apricot paired with dark chocolate and bergamot, complemented by hazelnut praline. Classics such as Tiramisu are featured alongside Nocciola, a cocoa and hazelnut cake served with crema ice cream and warm chocolate foam. The experience concludes with a Limone by Chef Bonaffini, combining Amalfi lemon and vanilla granita with mandarin foam and ricotta for a seasonal finish.
Beverage Manager Imelda Ng and the team complete the experience with a curated selection of four cocktails, developed to complement the flavours of the afternoon tea menu.

Designed for guests seeking a lighter yet indulgent option outside of traditional afternoon tea hours, the 101 Days of Summer menu features Amalfi Lemon and Vanilla Granita by Chef Bonaffini (SGD 20 per portion), alongside a selection of cocktails available à la carte.
Highlights include La Dolce Vita, combining Código 1530 Tequila with cream, lemon bitters, strawberry sorbet and Prosecco, and the Italian Sour, which brings together Malfy Gin, Amaretto, lemon juice, pistachio syrup and egg white for a rich, textural balance of citrus brightness and nutty depth. Fioritura, also available as a mocktail, offers floral notes with Monkey 47 Gin, jasmine yuzu syrup, citric acid and tonic, evoking the freshness of a blooming Italian garden. Pesca Amaro layers Glenlivet 12‑Year‑Old with peach Campari and Cocchi di Rossa, balancing fruit and bitterness for a refined finish.
