Valerio Pierantonelli is Chef de Cuisine at Four Seasons Hotel Singapore, bringing with him a deep-rooted passion for Italian cuisine, a global culinary perspective, and a heartfelt commitment to creating memorable dining experiences. Guided by tradition and the spirit of conviviality, Chef Valerio believes that food is ultimately about connection. “Cooking is never just about the dish,” he shares. “It’s about the emotions you create, and the memories people take away from the table.”

Inspired by both his grandmothers from a young age, Chef Valerio’s love for cooking was shaped by family kitchens where passion and generosity were as important as technique. This early influence laid the foundation for his culinary philosophy: one grounded in humility, respect for ingredients, and the understanding that nature provides the finest starting point for any dish.

Chef Valerio’s professional journey has taken him across the world, allowing him to discover new ingredients and cuisines while refining his own approach to cooking. Early in his career, he volunteered at the annual Sagra dell'Amatriciana festival in Italy, which cemented his respect for tradition and community. Particularly drawn to seafood for its delicacy and depth of flavour, he balances finesse with boldness in the kitchen. His signature Carbonara remains a personal favourite, as it is “classic, strong, and unapologetically old school.”

Influenced by culinary icons such as Anthony Bourdain, Marco Pierre White, and Massimo Bottura, Chef Valerio approaches each creation with honesty and purpose. For him, the greatest reward lies not in accolades, but in the ability to make guests smile and leave the table feeling genuinely happy.
