Celebrity Chef Michael Mina Returns to Dubai to Dazzle Diners at Four Seasons Hotel DIFC

The seasoned chef will be at MINA Brasserie from November 17 to 21, unleashing new creations inspired by his Middle Eastern heritage

Award winning chef and Dubai favourite Michael Mina is back in town from November 17 to 21, 2022, unleashing his new creations at MINA Brasserie at Four Seasons Hotel Dubai International Financial Centre. The Michelin-starred chef and founder of MINA Group with more than 40 restaurants is set to bring a repertoire of new brasserie-style dishes with his signature touches of inspiration from the Middle East.

“MINA Brasserie holds a sweet-spot in my heart as my first venture outside of the USA,” says Chef Michael Mina. “I cannot imagine a more inspiring location for a restaurant than Dubai, which is such a diverse and dynamic city. When I cook in Dubai, I feel like I am cooking for the world, with people from different corners of the universe trying the cuisine that is so dear to me. It is also a pleasure to be back at my second home in Four Seasons Hotel DIFC, where the hospitality is as warm as can be and second to none.”

As part of his visit, the revered chef will be launching exciting new recipes that Dubai’s foodies will be eager to taste. True to both his Middle Eastern roots and his Michelin mastery, Michael’s King Salmon is served with saffron couscous and preserved lemon for the perfect punch of acidity. This is balanced with sweet tomatoes and a yogurt espuma with hints of dill. Another gem from the sea, the Arroz De Carabineros, is Michael’s inherited recipe from his mother, who loves cooking up a feast with oriental rice and fish stock complementing the fish she would pick up from the market. Michael has since uplifted this family heirloom, deciding to use the distinct and robust flavour profile of Carabineros prawns. Lastly, the restaurant will launch its signature Marinated Lamb Chops, one of Mina’s favourite meat dishes inspired by his travels in the Middle East. The dish I served with stuffed vegetables and a smoked cauliflower puree with yogurt and olives for a noticeable oriental touch.

Fans of Michael’s modus operandi, which focuses on simple yet technically excellent cuisine, can look forward to lunches and dinners lead by the Chef himself. The Chef’s visit comes at an opportune time, with the launch of MINA Brasserie’s new terrace to welcome the beautiful al fresco weather.
