Atrium Bar at Four Seasons Hotel Firenze presents The Tasting Globe, a new cocktail list inspired by the dishes, traditions, and culinary encounters that marked Executive Chef Paolo Lavezzini’s life around the world. Not a reconstruction of places, but a celebration of moments: childhood aromas, professional milestones, unexpected discoveries, and the timeless comfort of flavours that stay with us long after we leave a place behind.
“We wanted to create a cocktail list that bridges cuisine and mixology in a meaningful way,” says Edoardo Sandri, Assistant Bar Manager and creative lead behind the project. “Each drink originates from a dish that has shaped Chef Paolo’s palate over the years. It’s not a literal interpretation, but a translation of its identity — the emotion, the memory, the flavour profile — into a contemporary cocktail.”
From kitchen to cocktail shaker, the essence of each dish is reimagined through contrast, aroma, and texture. What begins as a culinary memory transforms into a liquid narrative, crafted by the hands of the Atrium Bar team and revealed to guests through an interactive globe, where each of the five countries is linked to a secret drawer that unveils the drink’s ingredients.
Tracing the five countries that shaped the chef’s culinary journey, The Tasting Globe reimagines his adventures as signature cocktails:
- From Italy, the selection opens with Anolini in Brodo, capturing the soothing depth of Emilia Romagna region’s most emblematic comfort flavours, where the gentle warmth of broth meets the savoury lift of Parmigiano Reggiano in an elegant, aromatic expression. It is followed by Spaghetti Fritti, which draws inspiration from Italy’s most beloved duo, pasta and tomato, offering a crisp, bright interpretation that synthesizes an unmistakably familiar taste with a playful twist.
- France introduces an effortlessly refined touch. Crêpe Suzette evokes the interplay of citrus and caramel notes, resulting in a cocktail with polished charm and subtle warmth. Meanwhile, Huître Bretonne reflects the purity of Brittany’s shores, layering delicate saline tones and a fine mineral clarity that echo the region’s maritime character.
- Travelling onward to the United States, flavours take on a more expressive dimension. Buffalo Wings showcases the lively kick that defines the American classic, balancing spice, tang and sweetness with a sophisticated hand. In contrast, Bagel & Lox captures the spirit of a New York morning: its smoky, creamy and lightly pickled nuances distilled into a sip that feels both urban and unmistakably comforting.
- In Asia, the spotlight turns to refined, alcohol‑free creations. Yuja celebrates the luminous freshness of yuzu, offering a clean, uplifting interpretation inspired by Korea’s traditional fruit punch. Strawberry Timur Sorbet combines ripe strawberry brightness with the distinctive citrus‑pepper sparkle of Timur berry, yielding a cool, poised and refreshing profile.
- Brazil completes the selection with warmth and vibrancy. Brigadeiro takes the essence of the cherished Brazilian treat and elevates it into a silky, indulgent cocktail with a mature character. Moqueca, on the other hand, captures the soul of the country’s coastal cuisine through gentle smokiness, tropical creaminess and a lively acidity that recalls sunlit seaside kitchens.
The Tasting Globe is an experience meant to be enjoyed at the table, where each cocktail carries an intention: to spark curiosity, to recall a feeling, or to surprise with a familiar note seen from a new angle.
