Passionate about mentorship and service choreography, he believes that exceptional dining rests on genuine connection—learning guests' preferences, celebrating special moments, and ensuring every detail feels considered and personal. Off the floor, Giulio finds energy in soccer, golf, and chess, inspiration in the culinary heritage of Italy, and balance through time with family — priorities that mirror the community-minded hospitality he cultivates at Evelyn's each day.
