Jonathan’s journey began in Michelin-starred kitchens and luxury Parisian hotels, where he developed a deep appreciation for precision and service excellence. However, it was the creative freedom of mixology that captured his imagination. “Cocktails are accessible to everyone,” he explains. “I love knowing anyone walking into the bar feels welcome and part of the story we’re creating.” A visit to the iconic Harry’s Bar in Paris inspired his passion for elegance and professionalism that set the standard for his work.
Jonathan’s global journey has taken him from Paris to Geneva and Miami, where he served as the Director of the Champagne Bar at Four Seasons Hotel at The Surf Club. Under his leadership, the bar earned international recognitions, including North America’s 50 Best Bars 2025 and Top 4 US Hotel Bars by Tales of the Cocktail. These accolades reflect his ability to blend global influences with local identity, making every bar he leads a destination in its own light.
A strong believer in teamwork, Jonathan credits his success to the guidance of mentor Ashish Sharma, who inspired him to empower his team and strengthen community connections. At ARGO, Jonathan’s approach balances respect for timeless classics with local influences inspired by Hong Kong’s vibrant energy. His focus on simplicity ensures that even the most intricate concepts are presented in an accessible and enjoyable way, creating a sense of discovery for every guest.
Outside of work, Jonathan finds inspiration through travelling, dining, and bar hopping, immersing himself in diverse cultures and flavours that fuel his creativity. For him, success is about crafting cocktails that resonate with guests, creating moments of connection and joy.
