Château d’Yquem: Caprice, the World’s Premier Yquem Ambassador
Château d’Yquem, situated in the Sauternes region of Bordeaux, France, has been producing wines since at least 1711. Famous for its sweet white wines made from Sémillon and Sauvignon Blanc grapes affected by noble rot, it was classified as a Premier Cru Supérieur in 1855, the highest rank for Sauternes wines. Caprice features unique ex-domaine vintages from 1909 to 1927 and proudly holds one of the only two bottles of Château d’Yquem from 1895. Chef Guillaume and Victor Petiot at Caprice have sold more than a hundred 6L bottles of Yquem, making them global ambassadors for Yquem.
The Legacy of Krug Champagne
Krug, the illustrious champagne house founded in 1843 by Joseph Krug, is celebrated for its 21 hectares of vineyards and its distinctive use of 205-litre oak barrels for vinification, a rarity in the champagne industry. The title of Krug Ambassador is a prestigious honour and Caprice proudly holds this title. Chef Guillaume embraces this special connection by annually crafting a unique dish that complements the latest Krug cuvées. The restaurant has the privilege of offering exceptional Krug vintages, including Grande Cuvée, 1995, and Krug Clos du Mesnil 2008.
Exclusive Tesseron Grande Champagne Cognac: Aged Over Two Generations
Abel Tesseron, the fourth generation heir of the Tesseron family, continues the legacy of this renowned Cognac house, founded in 1905. Celebrated for its exceptional ageing process in Limousin oak barrels within a 12th-century crypt, Teseeron produces some of the finest Cognac.
Victor Petiot visited the vineyards of Châteauneuf-sur-Charente with Noé Tesseron, where they explored a Cognac from Grande Champagne that has matured gracefully over two generations. Housed in a 5-litre glass Dame-Jeanne, this 1950 Cognac showcases craftsmanship and refinement. Caprice is the first to receive an allocation of the masterpiece, engraved with the restaurant name.
Caprice Presents: 2022 Vintage Beer - A Franco-Hong Kong Craftsmanship
Caprice presents a unique collaboration with Yardley Brothers, artisanal brewers from Hong Kong known for their award-winning beers. Each batch of their IPAs is crafted in small quantities of 700 litres. In this special partnership, two barrels of “Vin Jaune” from the Sainte Marie estate in Voiteur, Jura, were used to age the beer for 2.5 years before bottling. This limited edition of 700 bottles is available exclusively at Caprice.
Best served at 12 degrees, this beer pairs well with Jura Comté cheese and Chef Guillaume’s sea bass with vin jaune and morels. It captures the essence of Jura wine with hints of walnuts and mild curry, and complements dishes such as Saint-Michel mussels in vin jaune sauce.

Caprice offers a curated selection of 30 exquisite teas and 5 sparkling varieties. The restaurant collaborates with TEALEAVES, a Vancouver-based brand founded in 1994, to provide a unique after-dining tea experience. Since its introduction in 2019, Water 808 has been sourced from 808 metres deep in the foothills of Mount Sainte-Victoire, a region renowned for its stunning landscapes and rich history.
