Growing up in Fukuoka, Japan, Chef Keinosuke Kawakami, known to many as Chef Kei, developed an early appreciation for the quality and freshness of seafood. That fascination became a lifelong pursuit of Japanese culinary craftsmanship, leading to a career spanning more than 25 years in acclaimed restaurants across Los Angeles, New York and Hawai'i.

In April 2026, Chef Kei joined Four Seasons Resort Hualālai as Executive Sushi Chef of NOIO, where he leads an intimate omakase experience overlooking the Kona Coast. Drawn to the Resort's unhurried beauty, where ancient lava fields meet the Pacific, he found a place where traditional Japanese technique sits naturally alongside the exceptional ingredients of Hawai'i Island.

Life on Hawai'i Island continues to shape Chef Kei's cooking. The day's weather, ocean conditions and seasonal harvests influence each menu, while traditional Japanese technique remains his foundation. For Chef Kei, omakase is far more than "chef's choice." It is an unspoken dialogue built on trust between chef and guest. Each seating is guided by instinct, attentiveness and respect, with every course thoughtfully composed to create a sense of ease. 

At the heart of his craft is a lifelong pursuit of harmony. Even after more than two decades behind the sushi counter, Chef Kei considers shari, the sushi rice, to be one of the meal's most important elements. Achieving the ideal balance of water, temperature, and red vinegar is a daily practice requiring patience and precision. It is this devotion to the fundamentals that allows warm, delicately seasoned rice and pristine seafood to come together in a single, beautifully judged bite.

Away from the sushi counter, Chef Kei follows many of the same principles that define his cooking. Daily exercise, yoga and meditation cultivate the composure and focus he brings to every service, while the Japanese art of ikebana, or flower arranging, deepens his appreciation for proportion, stillness and natural beauty. Whether preparing a single piece of sushi or welcoming guests to NOIO, his work is guided by intention and a sincere desire to ensure every guest leaves feeling relaxed, nourished and, above all, happy.
