In a collaboration reflecting the best of Italian cooking, Executive Pastry Chef Mattia Casabianca of Uliassi, a Michelin 3-star restaurant in Italy, joined forces with Executive Chef Marco Violano of Alto, the award-winning Italian restaurant at Four Seasons Hotel Jakarta.
On this glamorous occasion, the finest Italian flavours and culinary traditions came together, offering diners a rare opportunity to savour the combined genius of two world-class chefs. The sky-high views and bold red interiors of Alto offered the perfect setting for a night of dazzling gastronomy.
A Four-Hands Dinner to Remember
Guests relished an evening of extraordinary indulgence, enjoying a pairing of curated Italian specialities with premium local wine selections. The evening began with extravagances such as the Gold Dusted Potatoes with Truffle and Porcini and Lobster Sabayon with Sevruga Caviar, followed by sublime mains such as the Pumpkin Tortelli and Chicken Crumble, Sea Bass with Caponata and Cherry Sauce, and Beef Tenderloin Rossini Style with Fresh Black Truffle.
The Chartreuse White Melon and Crystallized Mint Leaves served as a refreshing interlude before the classic Sicilian dessert, La Cassata, and the delightful Petit Four that whisper dulcis in fundo, saving the best for last in a symphony of flavours.
