Simphiwe Mahange, affectionately known as "Sims," has carved a distinguished niche as the Head Mixologist at Four Seasons Hotel The Westcliff Johannesburg. With a passion for mixology that borders on artistry, Sims seamlessly blends classic elegance with contemporary flair, crafting cocktails that tantalize the senses.

His journey into the world of mixology began in Polokwane in the northern part of South Africa, where a burgeoning passion for the craft was kindled.  With a degree in psychology in his hands and a passion for connecting with new people he laid a solid foundation the understanding of human behaviour and the power of connection through social gathering. Coupled with an insatiable thirst for travel, Sims set out to explore the world through the lens of mixology, connecting people through crafted drinks and special experiences.

From the bustling bars of South Africa to the international waters of MSC and Royal Caribbean cruise lines, Sims' experiences have been as diverse as they have been enriching. His adventures at sea exposed him to a global tapestry of tastes, flavours, and techniques, broadening his horizons and inspiring him to push the boundaries of his craft.

Ever since he has continued to hone his skills, constantly seeking new ways to elevate his artistry. His cocktails are more than just drinks; they are stories, experiences, and expressions of his creativity to meet the need of those who order them. With each sip, Sims invites his patrons to embark on a sensory journey, where the flavours and aromas intertwine to create a truly unforgettable experience.

"My mixology approach blends tradition with innovation," says Sims. "I aim to craft drinks that are both timeless and contemporary, telling a story with each ingredient and technique."

Sims’s approach integrates cutting-edge mixology trends - such as foam, bubbles, and colour-changing liqueurs - with timeless techniques, all while focusing on creating a distinctive and personalized guest experience.

His signature cocktails include Toucan Sam, a vibrant, dynamic cocktail with complex flavours and visual appeal; and Spice Russian, a classic Russian cocktail with a twist, featuring house-made spice syrup with nutmeg, cinnamon, and cloves.

Sims is renowned for his ability to craft custom cocktails that cater to individual preferences and dietary needs. His creative process is driven by the challenge of turning unique ideas into exceptional drinks. Whether a guest has a specific vision or is open to experimentation, he ensures that every cocktail is tailored to exceed expectations.

"Creating personalized cocktails that push boundaries is my drive," Sims explains. "Each drink is an opportunity to explore new flavours and techniques, offering unique experiences to our guests."

Notable creations such as Smoked Old Fashioned and the Deep Blue Sea cocktail showcase his innovative spirit. His work with sustainable honey infusions and house-made simple sauces reflects his dedication to exceptional mixology.
