The highlight of this experience is at the Michelin-recommended Koh Thai Kitchen, where authentic southern Thai cuisine rivals the breathtaking ocean views. Every Wednesday through the month of March 2025, the restaurant presents a heartfelt tribute to the talented women shaping its culinary world. “Presenting an exclusive menu crafted entirely by the remarkable chefs, each dish is a reflection of their creativity, passion, and deep connection to Thai flavours,” shares Hannes Schneider, Resort Manager. Complementing this experience is a beverage program with special cocktails to pair with the delectable menu.

Signature Thai Dishes by Leading Female Chefs

At the heart of this special dining experience, Michelin-recommended Koh Thai Kitchen invites guests to savour a menu thoughtfully crafted by the resort’s exceptional female chefs. Each dish is a reflection of their personal journeys, deeply rooted in Thai culinary traditions yet innovatively reimagined.

Starters set the stage for an extraordinary meal, with highlights such as Chef May’s Nua Yang Tao Than, featuring perfectly grilled Wagyu beef infused with aromatic Thai spices and served with a fiery dried chilli sauce and toasted rice powder. Chef Kwan’s Tord Mun Kleung Gaeng Goong presents a bold take on the classic prawn cake, enhanced with fragrant curry paste and crisp polyscias leaves for an added depth of flavour. Meanwhile, Chef May’s Yum Hua Plee Gai offers a vibrant banana blossom salad, where tender minced chicken meets a spicy coconut dressing for a harmonious balance of heat and creaminess.

For a comforting interlude, Chef Mam’s Tom Kati Yod Makharm Goong delivers a velvety prawn and coconut soup, enriched with the delicate tang of tamarind leaf and tender palm hearts - an ode to the rich, aromatic broths of Thai cuisine.

The main courses showcase bold, complex flavours that celebrate Thai heritage. Chef Ying’s Goong Mang Korn Kua Kleaung Gaeng is a true showstopper, featuring crispy lobster loin served in an indulgent dried curry with tender coconut meat and makrut lime leaf, lending a fragrant, citrusy note. Chef Jeab’s Gaeng Ra Waeng Nea Gae takes diners on a journey through time, presenting an ancient Thai curry that radiates warmth with turmeric and lemongrass, enveloping slow-braised lamb in a richly spiced sauce. Chef Ying’s Hor Mok Talay captures the essence of the sea with a delicate steamed seafood curry coconut custard, complemented by bindweed, sweet basil, and makrut lime for a silky yet complex finish.

Rounding off the experience, Chef Jeab’s Som Choon is a refreshing dessert that brings together the bright, juicy flavours of seasonal fruit and yellow Marian plum in a light syrup, contrasted with crispy fried shallots and a cooling lime granita - a delightful interplay of textures and temperatures to end the meal on a high note.

Paired with a curated selection of handcrafted cocktails, this culinary celebration at Koh Thai Kitchen offers more than just a meal. It is a tribute to the artistry, heritage, and innovation of the women redefining Thai cuisine.

Beyond Koh Thai Kitchen: Diverse Dining at Four Seasons Koh Samui

In addition to the special experience at Koh Thai Kitchen, the resort invites guests to dine at its other unique venues including Pla Pla by the sea and the pop-up Za’atar restaurant at The Beach House. Variety is the key to experience here, where each evening is filled with a memorable dining experience including Fisherman’s Night at the beach, Curry Nights, and the island’s favourite Tam Rab Thai – Thai cultural night – at Koh Thai Kitchen. The resort’s recent and most coveted experience is the Poolside Escape and The White Lotus Bar at CoCoRum, inspired by the HBO® Original The White Lotus Season 3 and available only until May 16, 2025. With a signature menu of snacks and cocktails, this immersive experience takes guests to scenes from the show, which was filmed at the resort among many other locations within Thailand. “Our dining experience extends to cooking classes, cocktail making lessons, as well as specialty private dining like the Once in a Blue Moon Dinner and Moo Kra Ta in-villa BBQ which brings a flavour of island flair to the table,” shares Hannes.
