Four Seasons Hotel Las Vegas unveils a new chapter for its signature restaurant, Veranda, reopening November 19, 2025 with a refreshed design and concept inspired by the essence of California. Open daily for breakfast and lunch, and weekend brunch, Veranda introduces its modern California Brasserie identity, where natural light, effortless style, and intuitive Four Seasons service create an atmosphere of relaxed refinement.

Designed by Avenue Interior Design, the reimagined Veranda celebrates the casual elegance of the Golden State through organic textures, botanical motifs, and abundant light, balanced by timeless craftsmanship. Drawing from Central California’s natural palette and classic brasserie influences, the design blends warmth and polish with subtle European cues. The result honours Veranda’s legacy while ushering in a new era that feels bright, approachable, and contemporary – a place both celebratory and serene.

“With this restaurant, we wanted to encapsulate the spirit of California, its warmth, light, and effortless connection to nature,” says Ashley Justman, Co-Founder of Avenue Interior Design. “Every material and texture was chosen to feel grounded and authentic, emulating the glow of a coastal sunset and the calm of an early morning. It’s a space meant to be lived in, where guests can linger, connect, and experience a true sense of place.”

The new Veranda evokes the ease of a California home, offering a setting that feels engaging and elevated. A sculptural olive tree anchors the dining room, dividing it into intimate and communal zones. Curved booths and upholstered banquettes create cozy moments, while open tables near the windows attract conversation under the desert sun.

The thoughtful and intentional materials palette captures the warmth and texture of the West Coast with layered woods, rich velvet and leather upholstery, marble tabletops, and hand-cut zellige tile. Bespoke brass detailing and custom millwork balance durability and artistry, while lighting evolves throughout the day – from sunlit mornings to soft, ambient afternoons that invite lingering over coffee or dessert.

At the entry, a custom botanical mural becomes a focal point. Inspired by Northern California’s orchards and vineyards, the art reinterprets nature through an abstract lens, framed by greenery, warm wood, and terracotta accents. The effect is lively yet composed, setting the tone for the dining experience ahead.

Every design element – from seating and lighting to circulation – was considered by Avenue Interior Design co-founders Andrea DeRosa and Ashley Justman to enhance flow and comfort, supporting Veranda’s full-service evolution from breakfast through lunch and weekend brunch. The result is a space that feels lived-in and welcoming, designed for connection and the pleasure of gathering.

The revitalized setting finds its complement in a fresh culinary direction led by Executive Chef Michael Goodman, Sous Chef Jason D’Angelo, and Pastry Chef Maruschka Ang. Together, the team showcases seasonality, simplicity, and the sun-soaked flavours of the West Coast in a menu that feels both modern and timeless.

Chef Goodman’s menu celebrates produce at its peak, sourced from family farms and boutique growers across California and Nevada. Vegetables come from Babe Farms in Santa Barbara and Murray Family Farms in Kern County; greens are grown by Girl & Dug Farm in San Marcos; fruit arrives from Frog Hollow Farm in Brentwood; and mushrooms are cultivated locally by Desert Moon Farms in Las Vegas.

Highlights include the Farmer’s Egg White Frittata with red peppers, asparagus, wilted spinach, tomato, mushrooms, and Laurel Chenel goat cheese, finished with vine-ripened tomato coulis and baby arugula; and the Desert Moon Mushroom Omelet, layered with local pink oyster mushrooms, baby kale, and Point Reyes brie. Guests can also enjoy the Farm & Sea Salad with Verlasso salmon, Girl & Dug field greens, heirloom tomatoes, artichokes, feta cheese, garbanzo beans, and fine herb vinaigrette; or the Sin City Burger, a brasserie favourite topped with Chef’s sauce, caramelized onions, applewood-smoked bacon, pickles, cheddar, and golden French fries. From nourishing breakfasts to vibrant, shareable lunches and indulgent weekend brunches, each dish captures the freshness, texture, and spontaneity of a California day.

Pastry Chef Maruschka Ang brings her artistry to Veranda’s pastry program with inventive desserts that balance comfort and craft. Her creations include the Warm Apple Crisp with caramelized apple, cinnamon oat crumble, and vanilla bean gelato; and the signature S’mores Bar with almond graham cookie, chocolate marquise, maple bourbon marshmallow, and espresso gelato – both reflections of the restaurant’s renewed energy and optimism.

Extending Veranda’s California spirit from the kitchen to the glass, the restaurant’s cocktails celebrate brightness, balance, and effortless sophistication. Highlights include The Morning Market, a garden-fresh take on the classic Bloody Mary; Citrus Grove Cobbler, a light, fruit-forward ode to California sunshine; and Berry Patch, a vibrant spirit-free option that reflects the brasserie’s wellness-minded approach. Each sip captures the essence of the Golden State: sunny, colourful, and fresh, served with signature Four Seasons polish.

With its seamless indoor-outdoor flow, Veranda transitions effortlessly from sunlit breakfasts to relaxed afternoon gatherings and lively weekend brunches.
