Just in time for summer, Four Seasons Hotel Los Angeles at Beverly Hills introduces La Ola, a bold new rooftop restaurant that infuses the heart of Beverly Hills with the soul of Mexico’s coast — and a fresh California twist.

La Ola makes waves as the first concept of its kind in Beverly Hills, fulfilling a long-overdue craving for elevated coastal Mexican cuisine paired with fresh, market-driven ingredients and a laid-back poolside vibe. Spanish for “The Wave,” La Ola channels the rhythm, colour, and culture of Mexico’s seaside regions through food, design, and experience — creating a destination that feels vibrant, transportive, and deliciously original.

In tandem with La Ola’s debut, the hotel has reimagined its iconic rooftop space, refreshing the poolside ambiance with new cabanas, umbrellas, chaises, and vibrant decor elements inspired by the natural textures, sun-washed tones and spirit of the Mexican coast — setting the stage for an elevated escape that blends relaxed California luxury with breezy, beachside energy.

Executive Chef Jesus Medina leads the concept with deep-rooted passion. Born and raised in Mexico, Medina found his love for food in his family’s kitchen. Over the years, he honed his skills in celebrated kitchens, always carrying the flavours and stories of home. With La Ola, he reconnects with those roots, blending time-honoured coastal Mexican dishes with California’s seasonal bounty and global influences.

“La Ola reflects who I am — my memories, my family, and my love for food that tells a story,” says Chef Medina. “I wanted to bring that joy and warmth to Los Angeles, in a way that feels modern, playful, and full of life.”

Chef Medina’s menu blends traditional techniques with modern creativity, serving lunch, golden hour, and dinner daily. Daytime guests can enjoy vibrant ceviches, crave-worthy tostadas, and tacos from “La Taqueria Medina.” As the sun sets, the kitchen leans into deeper, ingredient-forward dishes such as dry-aged red snapper a la talla, duck carnitas, octopus chicharrón, and his beloved “grandma’s mole,” reinvented in almond, yellow, and white varieties.

The beverage program brings its own spirit to the rooftop, anchored by a jade onyx bar. Bartenders shake up seasonal paleta cocktails with herbs and mezcal, clarified strawberry Daiquiris, spiked Horchata, and mini slushie welcome shots. Signature Margaritas arrive garnished with sea asparagus, while carbonated coconut cocktails keep things cool and unexpected.

The rooftop design sets the tone for escape. Natural textures, live-edge wood, and rattan accents wrap guests in breezy, coastal warmth. At the heart of it all, a striking mural by celebrated Mexican artist Abel Macias captures the essence of the concept. Drawing inspiration from Otomi textiles and Mexico’s marine life, the permanent installation adds soul, symbolism, and bold colour to the space.

La Ola delivers more than food and drink — it invites guests into an ongoing celebration. The summer lineup features:

  • Mercado Mariscos – a weekly seafood market-style experience
  • Tarot & Tequila Nights
  • Live DJ sets and modern mariachi performances
  • Interactive ceviche tastings and mixology pop-ups

On weekends, the rooftop turns up the charm with signature hour-on-hour amenities, which include “surprise & delight” moments starting at 10:00 am, and with La Ola’s opening, poolside loungers can select from playful, rotating treats such as Tajín-dusted melons, paletas, and Mexican-inspired ice creams.

Families will find a warm welcome too. Camp Four Seasons weaves La Ola’s flavours into its kids’ programming with guacamole-making classes and ice cream socials — turning the experience into a fun, flavourful adventure for all ages.

La Ola opens May 30, 2025, inviting locals and travellers alike to discover a new rooftop ritual — where Mexico’s coastal magic meets California’s relaxed sophistication.
