This year, guests can enjoy an exquisite Christmas Eve dinner in the intimacy of the private function rooms available at the Hotel, where every detail is designed to ensure an unforgettable evening that includes a customisable four-course dinner, a drinks package and floral decorations. The culinary options include such genuine delights as the king crab cannelloni; the stewed lobster with pumpkin and cardoon; the roasted turbot; the stuffed poulard, quite a tradition at this time of year; and the incredible tiramisu, perfect for ending on a sweet note.

To close out the year in style, the Hotel is offering an exceptional New Year’s Eve gala in its majestic Sol Ballroom consisting of a superb tasting menu that will begin with a welcome cocktail and such delights as red prawn tartare, white soya and citrus caviar. The main menu will then consist of seven magnificent dishes: sweet peas, clarified kombu kelp broth and black truffle; lobster stew, stew foam and cardoon; dry aged sea bream, artichoke and amontillado wine sauce; A5 wagyu, white truffle and Périgueux sauce; green apple, citrus and dill sorbet; origin chocolate, passion orange and rum ice cream; and, finally, a selection of coffees and teas with almond tejas, truffles and Christmas sweets.

ISA Restaurant & Cocktail Bar, the Most Roguish Venue at the Hotel
To satisfy those looking for a more daring idea, the chef at ISA Restaurant & Cocktail Bar, Ignacio Vara, has designed menus for Christmas Eve and New Year’s Eve that combine the best from the Asian world with touches of the roguish and contemporary style for which this space on the first floor of the Hotel has become famous.
The Christmas Eve dinner will begin at ISA with a selection of starters, which include the Galician sea urchin with white prawns and Ossetra caviar. This will be followed by a duo of dim sums including a scallop har gow with yuzu Hollandaise sauce and a panipuri filled with tuna tartare, ponzu and caviar, a combination that blends Asian tradition with the characteristic creativity of the kitchens at ISA. The main course will consist of sea bass accompanied by a carrot miso, kombu oil, coco, tonka beans and grilled bimi for a perfect balance of sweet and umami in each bite. ISA will then present a suckling pig terrine with bulgogi sauce and shallots glazed in orange and kumquat before kicking off the banquet of desserts: deconstructed yuzu pie for citrus fans and mooncake, an ancestral Chinese dessert full of textures that is a cultural symbol of unity, prosperity and happiness.
For those seeking to enjoy this dinner and celebrate the night of the 24th more intimately with loved ones, the private Santa’s Red Room at ISA offers the ideal space as somewhere that can be made private for groups of up to eight people.
To celebrate the last dinner of the year, ISA is offering a New Year’s Eve menu that begins with a faux lemon stuffed with paté, horn of plenty mushrooms and black truffle, a starter that heralds the luxury and attention to detail featured in this menu. The meal will continue with a selection of sushi and shellfish: white prawn nigiri with caviar, turbot nigiri with coriander sauce and a Nº 2 oyster with tosazu and shallots. The next course will include Chinese bread stuffed with caviar and sour cream followed by a tuna tartlet with ponzu, ikura eggs and shichimi. The main course will consist of a red porgy Kobujime with sweet peas and pak choi broth; while meat lovers will enjoy the second main of A5 wagyu tenderloin with a bulgogi demi-glace, mini grilled chives and siu mai. To conclude this farewell to the year, the dessert on this menu will certainly not disappoint: a spicy chocolate accompanied by toffee miso ice-cream and Japanese whisky syrup, as well as a home-made good luck biscuit that will reveal the first predictions for 2025.
After celebrating the end-of-year Campanadas, the event will continue at the ISA after party well into the early hours of the morning, bringing some of the first memorable moments that the new year has in store.

Dani Brasserie: a Christmas in the Skies
The seventh floor of Four Seasons Hotel Madrid will become the perfect setting to enjoy the Christmas of one’s dreams alongside Dani García and his festive offer, which includes a Sunday Brunch (from 3 November 3, 2024 between 12:00 noon and 5:00 pm) with a Father Christmas special edition on December 15, 2024 and another on Epiphany (January 6, 2025) for the Three Wise Men, as well as special meals for both Christmas Eve and New Year’s Eve. New to this year comes the launch of Dani’s winter terrace, where guests can appreciate the best views of Madrid dressed up for Christmas while enjoying a fondue with a glass of champagne.
The celebrations begin on December 24, 2024 with a tasting menu that opens with a mollusc dish that includes a selection of Galician clams in a hare jus; steamed abalone with sake and codium seaweed; house-style two-colour cauliflower caviar; sea snail au natural; and a Daniel Sorlut Nº 3 oyster accompanied by Ossetra caviar beurre blanc. This is followed by a Dani García classic that has been refreshed for the occasion: foie gras millefeuille with goat’s cheese and caramelised green apple before a lobster and imperial caviar consommé, full of contrasts, with lobster gelée and dill sour cream. The main courses will consist of sole Wellington with spinach and black truffle (inspired by the French matelote) followed by the exquisite roasted Challans duck à l’orange with crêpes. For those with a sweet tooth, the dessert offer begins with Lemon, Lemon (a light sponge with confit lemon mousse) and continues with a hazelnut molten cake with yoghurt cream, caramelised hazelnuts and vanilla ice-cream to conclude the experience in style.
The New Year’s Eve dinner once again begins with the Dani mollusc dish followed by one of the signature dishes from the career of this chef from Marbella: Tomate Nitro, a refreshed version of the classic with smoked eel, accompanied by a cold almond soup, herring eggs and angel hair. The next dish features another classic: Ossetra Imperial with green asparagus gelée and white asparagus cream, followed by roasted lobster resting on an upturned vol-au-vent and American sauce. The second main course will consist of pheasant stuffed with plums and foie gras sauce, while the sweet final touch comes in the form of a basil flan with an almond, pear and toasted pine nut crumble followed by a selection of smokey chocolates with chocolate, whisky and coffee butter ice-cream.
After enjoying the menu of your dreams to see off 2024 in style, those choosing to celebrate New Year’s Eve at Dani Brasserie will welcome in the New Year with the traditional 12 grapes and accompanying party to mark the start of the first festivities in 2025.
