Umiko Debuts at 1st Edition of ISA & Friends, the New ISA Experience to Discover Travelling Haute Cuisine at Four Seasons Hotel Madrid

  • ISA & Friends is launching a new series of gastronomy experiences at the ISA bar for which its Chef Ignacio Vara will work with guest chefs to create menus inspired by culinary cultures from around the world

ISA & Friends will bring a new series of experiences paying tribute to travelling haute cuisine at the ISA bar at Four Seasons Hotel Madrid. Each one of these experiences will have guest chefs explore culinary ideas from different cultures, enabling Ignacio Vara to combine the best international recipes and demonstrate that gastronomy is a universal language.

Initially reserved for a minority of connoisseurs, Japanese cuisine has taken some time to make a name for itself among the culinary preferences of Madrid. However, it has steadily grown in popularity thanks to the chefs who have discovered the wonderful gastronomy from the Land of the Rising Sun, recreating its dishes with the best of Mediterranean products. Juan Alcaide Gálvez and Pablo Álvaro Marcos are experts in this fusion and, through the dream that is Umiko, have successfully conquered the city with their reinterpretation of Japanese recipes.

A love for Japanese-Mediterranean cuisine and the search for excellence are the bonds that unite Umiko and ISA. With two Repsol suns and recommended in the Michelin guide, as is ISA, Umiko embodies that passion for perfecting fusion cuisine. Their expertise in Japanese techniques with local flair was therefore the perfect choice to officially launch the first edition of ISA & Friends on October 10, 2024.

The event will take place at the Himiko bar at ISA, an R&D space that invites exploration of all sorts of new combinations and techniques. Two seatings of no more than 10 diners will be offered to ensure the highest level of personalisation and an intimate evening with the chefs.

A six course menu will be presented during the experience in reflection of the passion shared by the chefs for fusion cuisine. The meal will begin with a Japanese-Cañí aperitif of cocido mochi followed by the classic paella nigiri from Umiko. This will be followed by a duo of tartar with wagyu and tuna topped with caviar. The meal will continue with a series of textures and flavours from the sea, including a dry scarlet shrimp ramen and an oxtail, beetroot and almond bao. To finish, diners will enjoy a shrimp porra and Hanoi coffee.

On this occasion, diners will have the opportunity to discover the ISA and Umiko menu from Juan, Pablo and Ignacio as they share their backgrounds, inspirations and the creative process behind each bite, creating a personal connection with diners that promises to be quite unforgettable.
